Better late than never, right?! I know I promised to share my Mom’s epic cornbread recipe when so many asked for it back around Christmas time. This recipe is crazy easy and oh so yummy. It’s particularly delicious because it’s a more moist cornbread than traditional ones. (Sorry to all the word-“moist”-cringers). Anyways, we are still in the thick of winter, so comfort food dishes are still oh so very necessary.
- 1 box Jiffy Corn bread mix
- 1 egg
- 1 can of Del Monte cream corn (or name-brand of choosing- just not generic because it does not have as much corn in it usually)
- Preheat oven to 400 F
- Grease a loaf pan
- Combine all ingredients in a bowl
- Transfer to loaf pan
- Bake 20 mins. May take longer to bake- wait until slightly golden brown
