One Year Blogiversary, and yes, there is cake.

One year ago in July, DJ and I moved across the entire country to this foreign land of the Bay Area. We greeted this new adventure with excitement and welcomed the change gladly. We soon figured out that if there is an antithesis to small town Indiana, it was probably our new California abode. Don’t get me wrong- Indiana will forever have a soft spot for me, it’s just different here. Like a child uncovering their five senses for the first time, I began exploring this new playground in awe. The mountains, the trails, the people, the events, the diversity, the buzz, the food, ohhh the FOOOD! I felt that I couldn’t do justice relaying to our parents all we were experiencing. So, I decided to start this blog. I started a diary, a virtual documentation of our memories, travels, and general happenings. I never intended or expected for anyone to read this outside of my mom, DJ’s mom, and maybe a couple girlfriends back home (hence the super unoriginal blog name- I didn’t realize that actually being creative was a thing). I, quite honestly, had no idea what I was getting myself into.

The first thing I didn’t realize was how incredible the WordPress community is. I actually didn’t even know there was a community when I began. When I received my first comment I was blown away- someone in Baltimore cared about something I wrote?! It baffled me. Then it began extending to Canada, Ireland, etc. etc. and of course, my beloved India. I began my own exploration through the world of blog, and the writings of so many resonated within me. I began to see the vulnerability, the talent, creativity, and the genuine hearts that create this virtual world; this is truly a special place.

This inspired me to share a bit of my own heart. Little by little the blog has also been my space to cope with the ups and downs of this past year and to just write. Which, if you are an author around here, you understand the cathartic nature in writing alone.

I reflect on this year and from traveling across the US with DJ, to creating our new home from scratch, to questioning my faith but finding it again, to studying endless hours for my NCLEX, to passing my boards, to visits from families and friends, to holiday festivities, to the epic meet & greet, to DJ and I both beginning our new careers and everything in between…..I realize this blog has been pivotal.

Not only have I made and gained priceless friendships that I can’t imagine life without, but your words of encouragement and love have lifted me on the darkest days. Receiving texts from family and friends saying me sharing struggles inspired them always caused me to raise a brow …… And there exists maybe one of my greatest lessons I’ve learned through blogging: There is something beautiful about embracing the struggle. There is something kindred in vulnerability. My walls and my desire to present a certain image to the world is slowly crumbling away because I now understand that very facade has actually kept me from growth. But I would not have grown without you. Each of you. From the other bloggers out there to the friends and family who have supported this endeavor, and especially DJ, who has allowed me to be so candid about our life.

Wednesday, I whipped down up to SF to celebrate with my girl, Annie, before she heads back to Korea (CUE THE TEARS). She is super on board with my wacky ideas, like idk, getting a cake to celebrate your blog? This totally began as a joke, but we rannnn with it. Any excuse for cake, AMEN?! 🙌🏻

We first headed to the oldest Restaurant in SF, Tadich’s Grill. This may be one of the most wonderful meals I have had in SF so far (which says a whole lot, because we have basically ate our way through SF).

After having the most phenyumonal meal you can imagine, we went back to her glorious apartment that overlooks the Bay and took pictures with a cake I ordered from Sugar, Flour, Butter bakery (highly recommend if you need a bakery in the northern Cal area).

I said I didn’t feel right about not having a glass of red wine in the picture if I was being true to myself. So we pulled out that Cabernet for the photo ops 😉

Protein Packed Chocolate Chip Oatmeal Breakfast Cookies

I start every single day with cookies and end every day with ice cream.

Not kidding! I say it’s the secret to a balanced diet and keeps me motivated to eat healthy the rest of the day!

Soooo…. I am finally sharing my breakfast cookie recipe per request! I have spent time after time and batch after batch trying to perfect these little guys. I finally feel I have come to a place where these breakfast cookies are exactly what I crave in the morning. And by crave I mean if I don’t have any left come morning my whole day is off. I pair a couple with my creamy avocado smoothie and am usually set for a full morning of work from 4:30 until about 11 am when I have my first break. Plus, the sweet & savory combo is perfection.

Grocery List:

  • 2 scoops Protein Powder of Choice (I prefer EAS Vanilla)
  • 2 C. Oatmeal of choice (either old fashioned or quick oats- I like quick oats)
  • 3 TBSP Enjoy Life semi-sweet mini chocolate chips
  • 2 Large overripe Bananas
  • 1/2 C. Organic Peanut Butter (I use Laura Schudder’s)

Directions:

  1. Preheat oven to 350 degrees
  2. Mash bananas in a large mixing bowl with a fork or spatula
  3. Add all other ingredients
  4. Stir and mash with spatula until thoroughly mixed- put your muscle into it! It’s dry at first, but eventually becomes nice and doughy (may use a Kitchen Aid)
  5. Using a Tablespoon, scoop cookies one at a time onto a greased baking tray
  6. Put all cookies into the oven, cook for 7-8 minutes
  7. Allow to cool, enjoy!
  8. Store leftovers in the fridge.

**They taste like little cookie dough bites cold, but I reheat mine in the microwave a couple seconds before eating them in the morning. I think they are even better warmed up!

A Super Quick Update!

HEY YA’LL!

Long time no seeeeee.

I have a sweet & short post about what we have been up to lately (well, relative to my other posts) . I received a text from my mom yesterday saying she was concerned since I haven’t made much contact with anyone the last week or so. NO WORRIES- all is well & good just busy, busy.

It reminded me that I haven’t updated the good ole’ blog baby in a while. I need to write an entirely separate post soon about what I have learned this past month in regards to nursing, faith, and dealing with some intense emotional battles. It’s been nothing short of a glorious, ferocious, awful, and beautiful rollercoaster.

That will come soon… I travel to Pittsburgh this weekend so I’m thinking the flight may be a good time to unravel that one.

But for now, for all our friends and family that are all, “How the heck are ya, where the heck are ya, and what the heck are ya up to?!” … this is my response!

I graduated from the FACC series class last week (Foundations of Acute and Critical Care Training). That means wayyy less online work, aka less free time sucked up, and more consistent 36 hour weeks in the hospital rather than sporadic classes mixed with shifts. HALLELUJAH! I learned so much through this series and while it was a major time leach, I am incredibly grateful for all I learned.

. Hahahahha. I know it’s bad, but I couldn’t help but share. Our FACC leaders definitely have a good sense of humor (which I have learned is entirely necessary in nursing).

DJ’s doing amazing at his job working with the SJ Giants in marketing. I admire him beyond words with the way he has handled this job and the integrity with which he also handles the challenges. He has been an outstanding leader in our small group through church as well. Unfortunately, I haven’t been to our small group because of work, but DJ has been leading a good deal of the sessions. I am just thankful I have him as my rock as we go through this hard, hard year.

We both are in such similar places of navigating the season of NEW. New jobs, new coworkers, new schedules, new responsibilities, new frustrations, and new memories! We still hardly see each other but soak up every second when we do.

Many evenings I get home and go straight to sleep after a 12 hour shift, and can’t do much the night before a shift considering I have to get up at 4/4:30. But some nights when I don’t have to go back the next day I try to just soak up that alone time.

One of my favorite ways to enjoy those quiet evenings are in my feng shui hangout eating sushi, drinking some wine, and reading or watching a reality show. Call me basic if you wish, but these sushi rolls are ANYTHING but basic.

A place near our apartment called Azuma can be delivered through GrubHub. I oscillate between the 49ers roll (eel, avocado, and other assorted fish), and the sunshine roll (lemon, tuna, eel, green onion, and avocado)…. with brooownn rice. Brown rice adds a texture and heartiness to the roll that I love.

It’s all so delish. Probably the two best sushi rolls of my life. But I have a problem. When DJ and I went through the budget/spending this month I embarrassingly replied “Sushi” when he asked what each purchase on my card was from. Whoops. Girl’s gotta eat. #sorrynotsorry. #sushinotsorry.

Speaking of eats! Here are our other recent ones..

I have been LOVING my turmeric cauliflower mashed potatoes with black bean burgers, hummus, and parmesan asparagus. You know I get on kicks, and this is the most recent! I also love topping it with basil.

Flat-out pizzas are always a good go-to. If you’ve never tried a good flat-out pizza, it’s definitely worth a try- especially if you are a lover of thin crust pizzas! Each flatbread is only 100 calories, and then I top with vegan cheese, tomatoes, basil, and oregano to make a mean vegan margarita.

It’s also been a while since I’ve made Indian. When we lived in our Toho in Indiana this was one of my favorite meals to make! DJ loves it too. For myself I make a vegetarian version with dosa, idli, and tons of curry laden veggies. For DJ I make chicken tikki masala with jasmine rice and naan. Who doesn’t love naan?! If you don’t know what naan is, you don’t know what life is, so please stop reading this and go try some naan.

Alsooo, I may have casually ordered a jillion gallons of PB2 on Groupon. It was a steal!!!! Pb2 is so dang expensive, so when I saw this Betty bargain steal I had to jump.

Ok, ok you caught me. When going through the budget and spending it goes like this … Sushi, sushi, PB2, sushi, overage data fees while blogging about sushi and PB2, sushi.

I’ve also been running a ton to deal with my stress. Lately I’ve been listening to podcasts rather than music. Just wait for the next Friday Faves, folks, and I will divulge some of my loooves. Anyone have favorites out there?!

Last Thursday I got my hair did! Wooohoo!!!! The roots were so bad. I am in the wedding Saturday, so I felt like I had to be somewhat presentable for someone else’s forever wedding photos.

After getting the roots all touched up and a nice (MUCH NEEDED) trim, I was craving me some boba. Luckily, next to the Aveda salon on Santana row there is an amazing Boba shop It hit.the. spot. Especially because it was way too hot that day. Raise your hand if you love boba?!

FINALLY one of DJ and I’s days aligned for a day off last Friday. We started our day off by sleeping in until the cows came home.

Then I was craving boba, … so… boba.

We also decided to try out Game of Thrones. Holy maloly- it’s entralling! Does anyone watch? Yes, it’s pretty dang explicit, but I know most shows are out of the gate to get more ratings. The story line is just insanely good. Any thoughts?! We love it.

For dinner we tried the newest addition to our little Cupertino downtown- Stein’s Beer Garden.

It was one of those places that just has pizzazz.

I loved the feel. It was beery unique! There is a literal wall lined with faux foliage in a modern, industrial environment.

The staff was super friendly off the bat. While there was a bit of a wait, it was worth it.

We started with complementary pickled veggies in a jar. I don’t know why more places don’t do this! It was such a great mini app. I didn’t even miss the typical starter bread (GASSSSPPPP!).

I’m not big on beer, but felt like I should at least try one, considering it’s in the restaurant’s name. The only kind I really like that I’ve tried are Sours. Their Mango Gose was surprisingly refreshing with the meal I had!

I tried the roasted beet & smoked salmon salad with arugula, chevre goat cheese, and spiced pecans. It was fantastic! (Also- PS. I just have to tell my Aunt that she would LOVE this place, it’s so up her alley, so ya’ll need to come back soon!).

DJ tried the Yucatan Pulled Pork Sliders with chili paste marinated pork shoulder with chipotle aoili chicharon, cilantro slaw, jalapeno, and roasted tomato salsa.

The rest of the night we flew through a couple episodes of GOT, then we both worked all weekend.

Fast forward…

It is currently Wednesday evening, I’m on the heels of 4- 12 shifts nearly in a row. I’m not sure my mind is all here and this post probably has a million errors haha. I’m haphazardly watching bachelorette and realizing I have a million things do before 10 am tomorrow. Oh well. It will get done, it always does.

I leave tomorrow for Pittsburgh and don’t return until Sunday. I plan during that time to catch up on blog comments and your blogs too (although, I’m not sure the 7 hour traveling day in the air will have wifi?!)..

Monday is back to work and then I won’t see DJ again until Tuesday, but he works most of the time too. Also- my best friend’s baby is due this week, and I can hardly stand it. This time of life is wild, and hard, fun, challenging, and rewarding. I know we will look back on this year and see it as one of the most transformative for the both of us.

The Most Refreshing Avocado Smoothie

I am a creature of habit.

So when I change up those habits, it’s a big deal!

For the longest time, those that follow along know I have had a slice of toasted Ezekiel bread with greek yogurt and strawberries on top for breakfast.

But then one day I created this gem, and since I have had this smoothie nearly everyday! It’s beyond refreshing, smooth, and creamy. Additionally, it fills me up for those first couple hours starting off long nursing shifts, and the healthy fats give me all the brain power (I also love pairing this with my oatmeal protein PB breakfast cookies, which I will share soon!).

My sister was super skeptical if she would like this when she visited, but she absolutely loved it. After a day or two she was also craving them! I promised her and a couple others I would share the recipe soon. And per everything I share- it’s so easy!

Grocery List:

  • 1/2 Avocado
  • 1/2 of 5.3 oz Toasted Coconut Vanilla yogurt (Dannon) container or 3 TBSP of plain greek yogurt
  • 2 oz. coconut water
  • 2 oz. milk of choice (I use cashew or an almond/coconut blend)
  • 1 packet Stevia
  • 4-5 ice cubes

Directions:

  1. Put it all in a blender (or Ninja), and blend that sun of a gun.
  2. Enjoy!

Avoca-JOES. Vegan Sloppy-Joes in Delicious Avocados!

Sloppy joes for many are associated with their childhood- the carefree days of summer, family BBQs, and just the “good times”. And really, who doesn’t love a good joe? Welllllll… I have a delicious, healthy, vegan recipe for you that will throw ya back to those times, but at the same time will fuel your health. A joe? And a healthy joe? I am avOKAY with that! Annnd this is carnivore husband tested + tried. Verdict: He LOVED them!

Grocery List:

  • 6 Avocados
  • Two 15 oz. cans (or 4 cups) of rinsed and dried cooked chickpeas
  • 1 teaspoon olive oil
  • 1/3 medium red onion,diced
  • 2 garlic cloves, minced
  • 1/2 green bell pepper, minced
  • 1 15-oz. can unsalted tomatoes with liquid
  • 1/4 cup tomato paste
  • 3 TBSP low sodium soy sauce
  • 1.5 TBSP Sriracha (omit if you don’t care for too much spice)
  • 1 TBSP all natural maple syrup
  • 2 tsp. oregano
  • 1 1/2 tsp. cumin
  • 1 tsp. smoked paprika
  • 1 tsp. dried thyme
  • Plain vegan yogurt (or plain greek yogurt if you are OK with straying from the 100% veg.)

Directions:

  1. Chill avocados in refrigerator (trust me- they are much better cool than room temp.) for a few hours.
  2. Cut in half & de-pit the avocados, and scoop out about 1/4″ of the center
  3. Dice garlic, mince red pepper and onion
  4. In a mixing bowl, mash chickpeas with clean hands or a fork into small chunks, set aside. (If you notice the skins falling off the chickpeas, just go ahead and pull them out of the mix & discard).
  5. Heat the olive oil in a large sauce pan over medium heat.
  6. Add the onion and garlic and sauté until the onions are translucent/garlic is fragrant.
  7. Add the bell pepper and mashed chickpeas; sauté for about two minutes
  8. Add the tomatoes, tomato paste, soy sauce, Sriracha if desired, syrup, oregano, cumin, paprika, thyme, a touch of salt and pepper; simmer, stirring for about 15 minutes until heated through and thickened. (If it starts to stick too much, turn down heat a touch and add a little water to deglaze the pan).
  9. Scoop heaping 1/4 cup chickpea mix into avocados
  10. Serve immediately with 1/4 cup yogurt of choice!
  11. Bon appetite!

**Feel free to add the “joes” to a plain bun or butter lettuce wraps if you aren’t an avid-avo fan!

Hanging on by a Med

GOOOOD MORNING!!! 

Pull up a chair, let’s have a quick chat over some morning toast and coffee!

Yes, yes- quite different from my strawberries and cream toast I have each morning. Instead of strawberries I used bananas since I was having calf cramps last night and added Evoke muesli for a little crunchy pizzzazzz.

Currently, I am sitting at a Starbucks before work trying to finish up this post (it’s a classroom day so I slept in until 5:30!). Unfortunately, I had to betray Peet’s because it’s further than the Bucks. Buttt you all know where my loyalty resides.

So let’s see…. last week I worked Wednesday- Sunday every day. It was the first time I worked all through the weekend and it was a bit trippy! (When I was off Mon/Tues, everyone else was heading back to work!).

DJ had off and spent time with his family over the weekend. I’m so glad he had that time but also quite jealous- I miss everyone so much!! Thursday was technically “off” and since I was not required to actually go to the hospital, I stayed cozied up in my home and got a ton of studying done for EKGs (with the occasion Fine Cooking skimmin’ break- gotta whet those cooking ideas!).

I do have to mention Saturday though- I had a legitimate anxiety attack at work. I have only had maybe three full on attacks in my life- and this was one of the worst. It was around 1:30 in the afternoon and I hadn’t had a chance to take my lunch, so I bet low blood sugar catapulted the issue. I think it was just a rough moment too.. I am thoroughly convinced this is the most difficult/stressful time of my life, perhaps ever, but the support is phenomenal so I know (I hope) I can make it through. Some people drop out of the program at the six month program- I am just praying I make it through. I will give it my all. God wouldn’t call me here if he didn’t have plans.

Also- although It was a rough day, but the next day was 100% better. I’m finding that for every bad day there will be a good day. My preceptor told me I am right where I need to be- I am just unfairly hard on myself and I don’t forgive myself very easily (even for the smallest mistakes). This whole journey is bringing some serious self-reflection to the surface. I come home, even from good days, and the wheels just turn, turn, turn. I can’t turn my mind off. I wake up in hot sweats and start thinking about things I may have forgot to chart, conversations, teaching I may have accidentally omitted, etc. I have a system that works, and my to-do lists, but as a new grad, it’s hard to cover every single base (hence the preceptorship). I’ll be find one moment and then my heart is racing over these thoughts that creep up. I feel better once I’m in the hospital though… it’s the down time- I drive myself nuts!

But in those moments I try to celebrate the small victories: The family who thanked me, the patient who told me I was their favorite nurse (seriously melted my heart), advocating for my patient and the doctor taking my thoughts into account, becoming more comfortable with my skills….. there are victories and rather than focusing so much on my mistakes and failures, I have to choose to celebrate the victories.

I pray, I breathe, I am reminded that this is normal.

I actually didn’t intend to share that. But sometimes ya just start writing and things come out!

Anywho, this week was a tapering week for running, so I had some nice, easy leisure runs outside. When I get stressed out I like to run, run, run……hence, tapering this week was hard for me!!! I was craving long runs- but had to limit myself. However, the weather was GORGEOUS, and those short spurts outside helped elevate my spirits for sure!

We decided to try Pacific Catch in Campbell.

When we sat down, our waitress was a doll and brought us out samples of Hawaiian Poke! I don’t think I’ve ever had poke, but it was very tasty!

DJ ordered their fish tacos and said they were pretty decent!

I tried their inside out roll (spicy tuna over California roll). It was ok- it was fine enough, but there is WAY better sushi in other places in the area. But overall, it was a fun place and still a tasty experience.

I also loved how themed-out the restaurant was. They had these “sea glass” bottles as water serving bottles—–it was funny though because DJ and I thought everyone was drinking Grey Goose vodka when we walked in, lol.

They even used the bottles as hanging light fixtures!

We then went to Santana Row, walked around a while, and then stopped by Safeway for the necessities for a good, chill date night! (Ice cream was already at home, of course ;)). Also- this wine was on sale and I’ve never tried it before. It’s called BV Coastal Estates and man oh man- it is good!

I was feeling pretty stressed out on Tuesday. I went for a run in the morning and DJ said he was craving some good pancakes. After some research, he found that Uncle-John’s Pancake House in Campbell was supposed to be some of the best! We decided to give it a go!

We both LOVED the whole ambiance- very 50/60s diner-esque feel (which makes sense considering they started the restaurant chain in 1958!!!!). I’m sure it’s been renovated since- it was pristinely clean and the staff were jovial and welcoming!

I ordered their egg white veggie omelette (yum!), and DJ, of course, ordered their pancakes with a side of eggs and bacon.

The verdict: Very good pancakes, but not the best. Now, if you like somewhat fluffier pancakes, you would love them! DJ loves the thin with the crispy buttery-caramelized outside. (He claims The Bellagio in Las Vegas are setting the standard).

The rest of the day I studied my EKGs and prepped for the rest of the meals for the week. From monopoly, I had $2.00 off a large deli roasted chicken, so I grabbed that for DJ. I also made some calrose rice, broccoli, and bread that he could throw onto a plate in the evenings (if he was back for dinner). I stocked up on sweet potato and salad ingredients, as well as this cauliflower lemon piccata which I have been craving lately! It has cauliflower steak, capers, shallots, lemon juice, and is cooked in white wine. I add a bit of basil on top because I think it complements the lemon well!

The last two nights DJ was home earlier than expected! I was super happy I could get a hug in before hitting the hay.

Wednesday until now has been a non-stop whirlwind. BUT tonight my mom flies in TONIGHT for the marathon on Sunday! WOOHOO!!!!! I can hardly wait.

Oh and below is a snap shot of a breath-taking view I had on the way to work. It’s hard getting up at 4 or 5 almost everyday, but the fact that the sun is coming up earlier and setting later has been helping immensely!

What a Hoppy Easter!!!!

Happy Friday!!!

How’s it going? I hope all your Easters were egg-cellent!

Hospital orientation ended yesterday (WHERE DID THE MONTH GO?!). All we have now is one more entrance exam next week. This coming weekend is going to be the busiest yet- I work Friday- Sunday with one eight and two twelves. Right now I am taking a quick break from the studies to whip out a post!

Before I jump into the recap I have something tragic to share………..

The legendary red salad bowl is no longer with us.

I realized that the “post 12-hour shift” time frame is very dangerous. Not only did I manage to break perhaps one of my most treasured belongings, but I also set a paper towel roll on fire, went to the store and realized I forgot my purse when about to check-out, and I used the word “one” instead of “won” incorrectly in my Friyay faves post. #Gotocollege.

Does anyone else go into a hot panic when they find errors in their published posts?!? It happens to me every time!

BUT, in other news! I made the last Blue Apron meal in the delivery Friday, and it was out-of-this-world YUM! (PS. if you want a $30 discount off go to the bottom of my About page!).

Also, that same day DJ and I were egged!!!…………….

Tell me this just isn’t the most clever Easter gift of all time!

Has anyone had Cheryl’s cookies?! They are my favorite sugar/buttercream frosted cookies out there. It was the perfect treat after a long day. I also needed to carb up for a big run in the morning!

Saturday

I mentioned in my post last week how I was going to attempt 22 miles to see if I can physically finish the Big Sur marathon on the 30th. I hadn’t been training too seriously considering I didn’t know if my work schedule would allow me to run it. But the race happens to fall on a weekend when I don’t work!

The training run actually went surprisingly okay! I am getting giddy about the actual race! DJ isn’t able to make it with work, so I was planning on driving there solo. Howeverrrrr, my mom called me yesterday to say that she is actually able to fly in! EEEK! This made me happy to near tears. I haven’t seen her since Christmas and to have that support for the marathon means the world.

And naturally, after those 22 miles, I have an abundance of blossoming flowers to share!!

Saturday evening I had the second portion of the Blue Apron meal. Since the baseball season started, DJ has been getting home later- more about midnight now. I spent the evening cleaning the house, doing laundry, and getting organized for the crazy week that was about to ensue. But I had Sunday to look forward to because………..

EASTER EASTER EASTER! What a glorious day. HE IS RISEN!

This Easter was quite unusual for DJ and I. We usually celebrate in Ohio, but for the first time we were here on our own with no family- just the two of us. I actually was pretty dang emotional (lol, what’s new). It all made me super nostalgic for Easters past- thinking of the Sunday services with my family, the far too competitive Easter-egg hunts I had with my sister over the years, having leisurely afternoon spring runs on those Ohio trails, and visiting DJ’s family in the afternoon (oh, and of course, devouring Mom L’s strawberry pretzel salad). I just missed everyone horribly- to a new level since I’ve moved out here. But I was thankful we had our Church family to spend some time with in the morning. That helped a ton. Our church had a fun photo booth, Boba tea, and the best people you could imagine worshipping our Lord and Savior ❤

DJ went to Church to help set up at 5:00 am and I slept in a bit (Lord knows I needed it). After service DJ napped and I studied. It was raining outside, so it was the perfect day for naps and studies.

DJ has been fighting off allergies something horrible and wasn’t feeling pictures- but I still had to somehow document the Easter Sunday outfit, right?!

I was itching to cook, but I simply didn’t have time with how much work I had to do for the week to come. We decided to go out instead and make it a date night. We haven’t seen each other much at all lately and our date nights just happen when we can snatch them now.

We settled on Alexander’s Steakhouse. We had been holding out for a special occasion, and I’d say there is no more perfectly special occasion than celebrating our Lord’s triumphant victory. We needed this romantic, quiet dinner to catch up on the last weeks happenings and to just be together. It was lovely, and I’ve reflected on that dinner every time I start to miss him throughout the week.

Alexander’s is known for having some of the highest quality steak in the world called “Wagyu”. DJ didn’t try it this time, but it’s such delicate meat that they actually wrap it in linen. I found this hilarious.

THE BREAD! Once again—-sprinkled with sea salt. Those little croissant things were our favorite.

I decided to try a Himachi shot after scouring YELP for the “must haves”. It was good! It’s basically like taking a shot of sushi (no alcohol or anything- just fish and other stuff that I’m not sure… haha). I make it sound terribly appetizing, huh? I’m not sure I would go out of my way to order it again, but it was definitely worth the experience.

And whenever octopus is on the menu……..

This octopus was fantastic. But STILL, nothing tops Marco Prime’s spanish octopus in Florida. NOTHING.

We also tried their bone marrow after having that fantastic bone marrow at Orchard City Kitchen. If you’ve never tried bone marrow, you must. It is one of the most savory, umami flavors of all time.

DJ ordered a Filet that he gobbled up real quick, so I’ll assume it was pretty great.

I tried their featured seafood dish for the halibut.  MMMM mmm. So good.

And we cannot forget the sides….Lobster truffle Mac & Cheese and Creamed Spinach. That lobster truffle mac and cheese may be one of my top five favorite foods I have eaten in my WHOLE life.

Last, but certainly not least, we couldn’t walk away without dessert. We had their Matcha Cheesecake and, holy canoli, I must go back for more. DJ said he wasn’t going to have any because he was too full…. when he took his first bite he couldn’t stop. (JJ!!!!! We may need to stop in here for dessert when you visit!).

But wait, it doesn’t stop there….

They brought out complimentary chocolates because when you give people free chocolate you win their heart. That’s why Olive Garden is so successful- the Andes mints (ok, the breadsticks may have a touch to do with it too).

Oh, hello, complimentary cotton candy! I did not see this one coming. What is it with all the free cotton candy lately (reference to LA trip with my girls).

That concludes our Easter Sunday

OH..before I forget! My sister-in-law’s Corgi, Pool Noodle, is in a big contest and is in ninth place! (Maybe you remember Noodle from the Christmas post?!). Anyway- I thought to myself, “Who better to ask than my amazing blogging Fam?!” If you have a moment PLEASE help her win! This is a huge deal for her little fur baby!
