There’s No Place Like Home: Part Two

Here we goooo, Part Dos! This one is a bit shorter, gotta give y’all some breathing room, hehe.

We left off the night of Monday the 2nd. In the morning of Tuesday the 3rd I met my friend Rachel at First Watch– my all time FAVORITE breakfast spot. It’s something we don’t have here in the West, so I was salivating as I walked through the door.

And I guess you can take the girl out of California, but you can’t take the California out of the girl…. naturally I went for their avocado toast. (I also love their coffee). My other favorites here are their tri-athlete and their massive pancakes!

Rach ordered their famous pesto chicken quinoa bowl with protein-packed quinoa mixed with kale, shredded carrots and house-roasted tomatoes topped with grilled all-natural lemon chicken breast, basil pesto sauce, feta crumbles and fresh herbs.

After breakfast, I snuck in a workout at the local gym then decided to go to Earth Fare- my main reason for coming home (jk jk … kinda)…. My last meal would include the taters from Burntwood and tofu nuggets from EarthFare. This is one of the food items I miss the absolute most and a must when I go home.

They didn’t have them in the main display and I started to panic. I asked the lady if she had any and she said none were made but she would be happy to whip some up. It was so kind, and I was willing to wait the extra twenty minutes to get some nuggs.

img_7274img_7275I grabbed some big salads for me and Clair before going to her childhood home to visit her mom and sister.

For dinner I met with another close friend from high school, Kylie, at Pub Bricco. I hadn’t been here in forever, and forgot how doggone delicious their food was.

Kylie had their salmon sandwich and I tried a bite- heaven. Anything with sun-dried tomatoes is pure gold.

We talked, barely stopping to take a breath for almost three hours, and yet it never seems like enough time! We have been sending cards back and forth this past year though which has been such a great way to stay in touch. Who doesn’t love still getting snail mail nowadays?!

In the morning of the fourth I woke up super early and headed to Lakeside, OH to join DJ’s family for a day on the lake!

This place is very dear to DJ and I. DJ grew up here in the summers and this was actually where he told me he loved me for the first time (fun facts all around). When you are here it feels like all is right in the world.

A ceremony was held to dedicate the Park to DJ’s Grandma and Grandpa- it was a beautiful and wonderful ceremony. Truly an unforgettable day. Love this family and honored to call myself part of it <3

After the ceremony I zoomed back to Cleveland to return the rental car. I was stuck in some serious bouts of rain- I do NOT miss that!!! Rain rain go away, come back when I am on my plane….. back to CA.. where there is a whole lot less precipitation.

BUT fighting the H2O was so worth it because I was able to attend my family’s fourth of July barbecue! My brother and his amazing wife Maura picked me up from the rental place and we drove to my cousin’s home for the evening.

I seriously hope I am half the parents they are!

After an incredible family day, I tried to catch some serious snoozes before having to get up at 4 am for my flight (which would be 1 am Pacific time). Eek! I was surprisingly hungry when I got to the airport, so I found a yummy chia seed pudding with berries and nuts and had a coffee before boarding.

SF Tourin’ & Big Basin Hikin’

Heyyy yaa! This post is going to be heavily picture laden- but not as heavy on the words (at least as much as usual 😉 ). This week has been busy running around getting ready to go back to Ohio this weekend, BUT I am going to try to squeeze this post out before we take off!

Soooo where did we leave off? I believe it was Thursday the 22nd… DJ and I headed to BW3 (Buffalo Wild Wings) in the evening to meet up with his coworkers. It was a blast, and I can’t wait to see them all again for another get together mid July.

Friday the 23rd kicked off a tremendous weekend. I started the morning (as I have every morning) with some avocado toast using Oren’s Hummus Shop whole wheat pita, hummus, and mashed avocado with pink Himalayan salt & pepper. I can’t get enough of this.

After an Insanity workout, DJ and I headed to Santana Row to do some shopping for him. I was thankful I didn’t have to look for anything for myself because I am overrrrr it! But I always love going with DJ just to tag along & have an excuse to find a cup a jo’ somewhere.

In the evening we drove into SF to attend our Church’s annual conference called If Not For the Hand of God at the Regency Ballroom. We had Mack Brock in the house & a ton of phenomenal speakers over the weekend. Every second was incredible. My notebook is filled with pages and pages of wisdom and conviction from these Pastors.

I also loved getting to see my sweet friend, Tammy, if only briefly Friday night!

DJ and I woke up around 6 am on Saturday morning, the 23rd. We decided we had enough time to try to squeeze in an awesome breakfast before a busy jam-packed day.

I have wanted to try Kitchen Story for a while- it’s one of those well known “Must try” brunch places in SF.

We were seated immediately since it was only 8 am on a Saturday (give it 2 hours and you are looking at least an hour wait).

DJ tried their millionaire bacon. The last time he had the bacon was at Sweet Maple. We had to see how this stacked up.

I had the Primavera with egg whites, spinach, mushrooms, and blistered tomatoes, a croissant, and rainbow potatoes. Such a wonderful start to the day!

DJ had their ricotta pancakes and said they were some of the best he’s had in the city.

Overall, we both agreed we still liked Sweet Maple better… but it was a fantastic breakfast nonetheless.

We attended the first session of conference at 9:30 am, then during the lunch break we scarfed down a couple complimentary sandwiches and decided to explore.

We stumbled across Japantown, a destination in the city we have never been before.

After the afternoon session, we decided to go to the 16th Avenue Tiled steps- a tourist spot we have never explored.

Apparently there was a lady stealing plants from the steps, and they had a picture “shaming” her for stealing. It seemed both ridiculous and hilarious.

After the steps we went to Twin Peaks. You may remember I went on my own a couple months back, and I knew DJ would love the views.

Last on the list for the day was Haight-Ashbury street… a step back in time to the 60s. It is known for being the origin of the hippie culture.

We decided to stop and grab a quick bite to eat to tide us over before heading home. We went to the first place we saw- Magnolia.

I decided to just have the house salad- I wasn’t super hungry since I had been nibbling on snacks I had in my purse all day- any other grandmas in the house?! I have food on me at ALL times.

Haight-Ashbury is also known for the Piedmont Boutique with the flailing-out-the-window-legs. What a hoot.

It truly felt like a step back in time… one of the craziest streets I’ve ever been on. Everyone was exceptionally friendly though- I will say that..

Sunday morning, the 24th, Tammy and I went on a loooong hike at Big Basin in the Santa Cruz mountains!

I’ve been wanting to do this hike for a while and finally a good time we both could go!

I have never seen Redwoods in person before and was BLOWN away. I have never seen anything so gargantuan in my whole life.

We had an hearty laugh over this form we had to put on our dashboard. This just instilled allll the confidence in us!

We set out to do the longest hike the Berry Creek Falls- Skyline to the Sea-Sunset loop.

The falls were stunning, located about five miles deep into the hike. The pictures cannot do them justice.

We hiked from about 10:45 am to 4:00 pm. It was a phenomenal and strenuous hike (the sign did not lie). The weather was perfect and the views were breathtaking. No greater therapy than nature.

Monday I cleaned up the house, did a load of laundry, and ran some errands. In the evening I made butternut squash pasta with lemon, garlic, and olive oil topped with sprinkled parmesan, a quinoa medley, and I also decided to make stuffed jalapeños for DJ (with Monterey cheese blend, white onion, and bacon).

Tammy came over to watch the Bachelorette and we snacked and chatted. So thankful for the time we were able to have together this weekend! As the show started, I had this giant salad that I’ve been eating on repeat this week with a black bean burger, tons of veggies, hummus, and balsamic vinegar.

Yesterday, the 26th, I spent the day getting together packages to ship that I sold on Ebay and Poshmark. I also went for a nice long eight-miler. It’s so funny around here- I swear we have two springs… the flowers go into full bloom early in spring then die then all of a sudden bam.. have a full bloom again. Not mad one bit about it.

Today, the 27th, I knocked out a little bit of the remainder of my to-do, meal prepped for when I’m gone next week but DJ is home, and started packing for Ohio! Anyone have any fun weekend plans you’re looking forward to?!

Finding my [[ Center ]] & Fighting Self Care Guilt

Happy Friday Eve, everyone! I have been spending the last couple weeks finding my center per the title. *Cue the yoga mudra*. This sounds like some serious Californian crap, but ohhh well, it’s trueeee.

Leaving off from the last post, I entered into the next week determined to do some serious self care.

Self care is difficult for me because I tend to feel like I have to be dying on my sword, exhausted in every way before I allow myself to take a darn bubble bath. But that’s what these couple of months are for before diving back into the deep end in August. I am struggling though because if I’m rested, calm, and moving less than the pace of a tornado- am I doing something wrong?! The guilt has been knocking at the door… but I had to remind myself of the beautiful lesson I learned about seasons/transition times when I moved here, and I am going to soak up these next few weeks best I can. After all, I have to be rested before I can give my all, right?

My sister, Andi, and I chatted on the phone on Father’s Day reminiscing about our Dad and life in general. I told her how I’m feeling a bit strange not being busy busy busy. She said the awesome thing about these phases and seasons is that you are available- truly available for whatever God might have for you.

Case and point- I was on a run today and saw a debit card on the sidewalk. In all my busyness previously, I honestly may have just left it, not bothering myself with it. But since I had the time, I was able to run the card to the nearest Police Station- It felt good being able to just do something that I selfishly probably wouldn’t have if I was in one of my busy seasons. The police called back and said the man was incredibly grateful. I also feel like I’ve just been able to be there for my friends and family a bit more this last couple weeks. Usually, I just keep my phone on “Do not Disturb” because when I was at work I obviously couldn’t answer, and when I wasn’t at work I was running around getting ready for work or trying to sleep. It resulted in a endless games of phone tags and a full voicemail box. Now, I actually have my phone on and am able to chat with my friends and family who are going through some tough stuff right now. I’m so glad I can be there to just listen.

So what does this self care look like? Well first, I have allowed myself to sleep without an alarm (which is a challenge when usually I set an alarm even when I don’t need one). My body has been thanking me though- I am breathing easier and feel like my feet are actually on the ground. My circadian rhythm is resetting- and not only physically- but emotionally too.

I’m beginning to actually feel like myself again.

Second- I am cutting out the artificial sweetener drinks and sticking to water. I love those ICE drinks and Vitamin Water Zero- but I have decided to try to just drink pure water. I have noticed the difference in two things- bloating & energy. I love my flavored wa’ (pronounced wah), but time to hydrate the old fashioned way.

Next, this past year in nursing I have severely damaged my back, actually more than I realized. I am working on doing more stretching and some yoga to help it, but DJ suggested I get a massage. I decided Monday June 11th to get one at Elements Massage in Los Gatos with a coupon. Although the masseuse  talked the entire time and we ended up talking about her family’s medical issues, it was still enjoyable. A nurse is never really off duty ;). Haha.

Monday during The Bachelor(ette) season is my favorite night of the week! I love that DJ watches with me because he has the most hilarious commentary. We took a nice lazy walk on Sunday night on Main Street and passed Rootstock Wine Bar. We decided we would hop in there the next night for a glass of wine before the Bachelorette.

It’s pretty expensive, but sooo delish, and a nice date place every once in a while. They always have some of the best wine. I also love the whole ambiance- it’s rustic, yet chic, and comfortable. On some nights they have live music playing. We sat out on the patio and enjoyed our glass of wine before walking home to eat our Tollhouse  chocolate chip cookies and watch maybe the silliest shows on television. (Although.. it does look like it could win an Oscar next to the Proposal- ew, that show– awful. Do not even get me started!).

Tuesday morning, the 12th, I tried my first Orange Theory class!!! I thoroughly enjoyed it. I used the arm band for the first one, so I don’t think it was accurate- but it a fantastic workout. I don’t think I’ll stick to the courses because it’s very similar to Insanity (with the HITT routine) that I already do. But every once in a while with some friends it would be fun!

Almost every night this last couple weeks (That DJ doesn’t have a game of course), Deej and I have been going on evening walks after dinner. This has been one of my favorite parts of the day. We used to take walks often when we lived in Indiana, but have just been so on the go since moving here. It’s been great to have that time together to chat, unwind, and reconnect.

Wednesday, the 13th,  I did Insanity then realized a new Handmaid Tale episode was out on Hulu. To Peet’s we go with popcorn in tow!

After, I rounded up our groceries for the week from TJ’s and did some meal prep the rest of the day. In afternoon I started the book, “Behind Closed Doors”. It’s a difficult read from a content perspective, but goodness I could not put it down. Has anyone read it?

Thursday morning, the 14th, I made the same avocado toast that I’ve been having every morning while enjoying it out on my balcony. It has a slice of seeded bread, 2 TBSP hummus, 1/2 avocado, and pink himalayan salt and pepper. I think I’ll be on this kick for a while.

I went for a run, although somehow I think a sweat bee got caught in my mouth and stung me or something. I was okay, but it was a bit of a shock and hurt! I don’t even know how that happened, lol, but the bee season is in full swing right now. I then was proceeded to be chased by killer crows on the last rung of my run. They followed me about 1/4 mile even when I changed direction and then started flying in front of my face. It was so scary!!! I dove across four lanes of traffic and finally lost them. (A few days later, I heard on the radio this is a thing in Canada!). Mack vs. Nature- 0-2.

I then caught up on e-mails, laundry, etc.

One of the meals I meal prepped for the week was salmon, broccoli, wild black rice, and ciabatta bread from Trader Joe’s! We gobbled this up for dinner.

Friday I headed to my first Bar experience!! I had heard about Barre3 from Kori, and when my friend invited me to try The Bar Method, I jumped on it. I think there are some differences between those two- but generally the same idea.

The boutique was immaculate, quiet, and adorably decorated.

So my thoughts on bar: I’m such a cardio junkie- so this was a fantastic new challenge for me! I loved how much they focused on strength through micro-movements. It was a workout unlike anything I’d ever done before. I still don’t know that I can totally depart from my cardio- but I would love to incorporate the idea of focusing on such specific muscles into my normal workout regimen more. No wonder Kori & Kaci (Kori’s twin) have the most perfectly toned arms!!

The rest of the day Sara, my friend, and I went back to her house to binge watch our show & snack.

In the evening I headed to Harry Potter Night to watch the San Jose Giants play!

They went alll out for this! When you enter the gates, they give you a ticket and sort you into a house. Despite the long debate DJ and I had in our kitchen about which house we would be in, I was sorted into Gryffindor! (The sorting hat at Warner Bros said Gryffindor too, sooooo).

If I had to sort myself I think I’d be in Ravenclaw. Which house are you?!

They even sold Butterbeer from a local brewery (It was basically cream soda, mmm mm!).

I just LOVE minor league games, especially at Muni. The food is irresistible and the environment is pure fun and excitement.

I recorded on video the House Race on broomsticks, and this poor little man ate it. I felt bad, but I couldn’t help from laughing.

Saturday morning, the 16th, I was craving a soft boiled egg over my toast. I went through FIVE eggs to try to get one that didn’t break right when I was taking off the shell. Well…..

I overcooked it when I finally thought I had it right. Haha. What are your tricks for a perfect soft boiled egg that’s a bit runny?!

I ended up just going with a normal over medium fried egg.

I went for a calming long walk, listened to a podcast, chatted on the phone, and then during my mid-stride bliss, I was pooped on by a bird. Not the first time this has happened, probably not the last. After taking a THOROUGH shower and washing all my clothes, I then got to work posting tons of things on Poshmark and Ebay that I’ve been wanting to post for a while.

These are all the clothes I have left (minus workout clothes/pants that are in my dresser). I feel lighter having narrowed it down to clothes I actually wear (considering I wear the same like five outfits in rotation- ha). DJ had to work the weekend, but was home Saturday night for dinner.

We improvised with the little bit of salmon we had left, rice, and them a tomato soup from trader Joe’s with tortilla strips.

Sunday the 17th was Father’s Day. It was a hard day- just missing my Dad and DJ had to be at work so I did feel a bit lonely. I went on a long walk in the afternoon and called my step dad, Pete, and my grandpa which turned my mood right around. I’m so excited to see them in about a month! I continued to spend the rest of the day spring cleaning and posting to Ebay/Poshmark.

Monday the 18th- Wednesday the 20th I spent the days shopping. Ok, that probably sounds wonderful to most of you, but not for me! I hate shopping (especially when I need something). I get in the mood maybe once a year for like five minutes when I actually want to shop. This was not one of those times. I needed to find a dress for a wedding we have next weekend and also was hoping to find something to wear for fourth of July. I struck out everywhere, leaving each place empty handed.

I did enjoy seeing the massive gorgeous Anthropologie at Stanford Mall.

Since I couldn’t find a single thing, to online shopping we go (I must clarify- I do LOVEEE online shopping! I’m still a female, ya know?).

Tuesday evening, the 19th, we headed to DJ’s Dad’s to celebrate Father’s Day and to say goodbye (They are moving back to Ohio). It was bittersweet, but I’m glad we had one last hurrah before we saw them go.

Yesterday morning the 20th, I had the best cosmetologist (in my book) at Limon Salon work some serious magic on my damaged hair (part 2)… part one is in the previous recap where she had to work my hair out of the awful highlights.

Last evening, I made a big crockpot chicken and veggie slow cooked meal that made the house smell magical. I am going to try to make meals in the next couple weeks that we can freeze for when things pick up here soon.

I’m now sitting at Peet’s (imagine that) and then heading to a work dinner with DJ’s coworkers tonight. Woohoo!

Facebook HQ Tour & Clearing Things Up!

Hello Everyone! I have been holding off doing an update post because I’ve been hoping to have a definite answer by now from the last school… but STILL nothing. They said late February/Early March, so I’m going NUTS. Sounds like everyone else is going crazy too based on the AllNurses.com thread I am following like a stalkery psychopath. I have been refreshing my portal every five seconds (where the decision will be posted). I’m loooosing it! This is torturous!

Also, I get that my whole job/school situation is SUPER confusing… so I want to try to clear things up for y’all who are not quite sure what the heck is happening, I can barely keep it straight myself: (or just skip this because, honestly, who cares haha).

  • In 2016 I graduated from a four year nursing school in Indiana with my Bachelors of Science in Nursing.
  • When DJ and I moved to California, it took me nearly eight months for the state of California to give me the OK to take my boards (If you followed me from the beginning you know the insanity that was!)
  • I started my one year Registered Nurse Residency program Spring 2017 on a neurosurgical unit. This means I am an employed nurse, but the residency is different as you have a more intensive preceptorship, are part of a cohort that you meet with about once a month, have a research project, and classes to enhance your clinical skills and learning. Nurse residency programs are a newer concept so this is where it is often confusing- it is not school, it is employment, just more supportive, learning focused, and integrative than traditional new nurse positions. Highly recommend.
  • I am coming to my one year with this program and graduate March 13th. (I’m also speaking at it, so prayers that that goes well would be MUCH appreciated). I present my research March 21st. After that I will continue to work on my unit for now, I just won’t have the extra class work or research project.
  • I am currently applying for graduate school to become a Family Nurse Practitioner. I have always wanted to be a general FNP, and am now considering more than ever possibly becoming specialized in neuroscience so maybe I can work at an outpatient neuroscience clinic eventually.
  • I am awaiting one last school’s decision before making my final decision. This decision is a big one because it determines where we are going to be living this fall.

Now we go wayyyy back! February 16th was my Dad’s birthday. My Dad passed away in 2009, and for some reason his birthdays always seem the hardest day for me. More than the actual day of passing, more than the holiday season (those are still difficult though)…. I think it’s because it’s the one day that was all about him. With holidays, we have new traditions/memories to buffer the pain. With his day of passing there aren’t great memories to miss or create a sobering wistful nostalgia contrasted with the grief and loss. But with his birthday, there isn’t much in between now and then… It is a purely bittersweet day. There exists what was and now a forever gaping “since then”. My family has had a hard time getting all together in the middle of February with our schedules, so the day immediately brings back the fond memories of going to Outback Steakhouse (his favorite) and having the whole family in one place. It is those memories that leave me missing him horribly and missing my family too. This year was a bit different though. Being in California, it doesn’t “feel” like his birthday without the blistering snow, Ohio quietness and gray skies. I sometimes am afraid I’m not honoring or remembering him properly- I wanted to go to Outback for lunch, but it didn’t work out with DJ’s schedule, and I had a string of work days coming up, so I hardly had any time in between. I talked to my siblings, that always helps-  but I just wish we could have all been together. I decided to take the day to remember and reflect- his kind heart, his unmatchable sense of humor, his sheer intelligence, his goofiness, and selflessness. I listened to those couple of voicemails I have saved from him that I know will both crush my heart and cause me to laugh through the tears. I wish that he could be in these blog updates and posts, and I wish he was going to see me graduate from this program next week. However, I like to think he knows, and is celebrating, just from afar. <3

I started the morning going to Target Express near us to fill in groceries that we were missing. On my way back to the apartment, I spotted that Main Street Cupertino had red lanterns held everywhere- I remembered it was Chinese New Year!

They had fun tents set up for the local businesses and people were bustling trying to snag some free SWAG.

There were fun little dog structures made of grass and succulents. I was so impressed! How are people so creative?!

I meal prepped for the day and prepped for work. When the evening rolled around, we had the awesome opportunity for a tour of Facebook HQ with our friend Tammy who works there.

We walked into a pristinely clean lobby with a nook with an almost misplaced homeliness with a mini oculus set up.

The woman at the front desk greeted us and had us give her our IDs. I had my ID out and ready in the car, and before getting out of the car I accidentally left it on the seat. When I realized this she went, “Oh no problem! Do you have Facebook? Just give me your name and I can verify with your picture!”. Too funny.

She then told us to help ourselves the the drinks in the fridge and showed us where the bathroom was. I walked over to survey the free hydration station and saw only two things in the fridge- Diet Coke and Water. I laughed- Diet Coke was my Dad’s favorite bev. I told my sister earlier that day I wasn’t going to have time to go to Outback or do anything big to celebrate him, and she said, “Just drink a stinkin’ Diet Coke!”. I took a picture of this serendipitous moment to send her.

Typically I wouldn’t take note of a bathroom, but this was the most stocked up public bathroom I have ever seen. It had EVERYTHING you could need, including hairspray. For some reason the hairspray made me chuckle.

Tammy and Ben (Ben is Tammy’s husband) (also you may remember I met with them a couple weeks ago for lunch), met us in the Lobby and we immediately headed to the dining room for some dinner. Emojis greeted us, dancing along the walls. I was already mesmerized by the amount of meticulous detail pointing back to the Facebook Empire.

They had multitudinous options for dinner, buffet style. Everything has a label and names each ingredient. They had plenty of delicious vegan (and non-vegan) options. When you are a Fbook employee, ALL the food is free (with the exception of a couple super specialty places). They say the first year you work there you gain the “Facebook Fifteen”. Most have verified this rumor has quite a bit of validity. I can see why!

Oh, and let’s not forget, they also have beer and wine available for their employees. Drinking on the job is not exactly discouraged around the Fbook HQ. People had drinks sitting at their work stations and we were told during meetings it’s not unusual for people to bring in a glass of wine.

Naturally, they have endless supplies of non- alcoholic bevvys including La Croix galore, Vitamin Water Zero (I love the lemonade one), and teas on teas on teas. Disneyland. Just Disneyland.

The food was TREMENDOUS. Mmmmm mmm. I had a sampling of everything and was not disappointed one little bit.

We then got a night tour of the property. Tammy said I’d have to come back in the daytime. Stay tuned for a part 2 sometime!

The main drag is literally a town. There are plenty of diverse restaurants for any palate, a barber shop, ice cream shop, a Hub shop (to get your bike fixed), and an arcade! If you need to de-stress, no problem- just go play some video games on your lunch break. LOL.

They have a little bridge connecting two buildings that they modeled off the Golden Gate, too cute!

Then… for the most epic part…. getting to try Virtual Reality for the first time.

It’s against Fbook rules to take pictures of the TV screen, but there was a screen right in front of where I’m standing. The TV shows everyone else in the room what I am seeing. With the headset on, I can see 360. It TRULY feels like you are standing somewhere else. It’s trippy. Tammy asked me if I was afraid of heights. I pridefully said, “Heck no, bring it on”. As soon as the screen transitioned I found myself on top of a building overlooking a good 1200 feet drop. My mind was tricked, and my heart started racing, my palms began to sweat and I began to panic. I had to actually take a moment, breathe and remind myself that I was not in fact overlooking a plunge to my death, but I was standing in a room with a very flat floor.

Tammy encouraged me to explore my surroundings. I got down and looked over the edge, not daring to get that close while standing. I then navigated the rafters, the steel planks, and the surrounding buildings. I did all this within a small three foot space.

We then did one where a dinosaur chases you. I had everything in me that wanted to turn and run, but I kept reminding myself, “this is not real!”.

The last one I did was a game where you chop up a bunch of fruit with a sword. I get super competitive in these things, okay?!? I know I look ridiculous, but come on’… serious about my fruit.

I then worked through the weekend, caught up on sleep, errands, and misc. to-do things on February 19th and 20th. On the 21st, I headed to my annual Dental checkup. I actually look forward to going to the dentist, not because of the actual dental part, but because of the people. I wouldn’t usually include something this silly in an update post, but it is a BIG deal that I have only needed one dental appointment this year. When we first moved here, I felt like I lived at the dentist office. (Hence how I know the staff so well). I had a root canal within a couple weeks of unlocking our door for the first time and had several follow up appointments to finish the repair and place the final cap. I was given a clean bill of health this time around, and no dental procedures are in my near future!

I had about a million things on my to-do list for the day, but it was so beautiful out and all I wanted to do was blast my music and walk down the quaint street of downtown Los Altos. So I did. I was surprised at my ability to “waste” time and not feel too anxious about it, but I also think I needed this. I knew March was bringing with it a new level of stress and busyness that I was going to be wishing I had taken a couple seconds to chill, breathe some fresh air, and just relax.

I decided with a clean bill of dental health and swag in my music fueled steps to treat myself to some solid mediterranean cuisine.

Occasionally I like eating by myself. I don’t do it often, but I find it so relaxing. Usually I’ll bring my laptop to blog or a book to read. I sat inside Cafe Nur, my to-do list tucked away in my purse and deeper tucked in the back of my mind. I savored my vegetarian sampler, sipped my Pellegrino and blasted my favorite Spotify playlist. I reflected upon what a nutty year this has been, and I was only one month from overcoming the most difficult obstacle I have ever faced: Nursing. I began to get emotional—overwhelmed with relief, gratitude, and yet excitement of what is to come. This calls for extra pita.

To prolong the procrastinative (not a word, but it should be) state, I decided to go for a long run out in the glorious sun. Mid-run I received an email from my Residency Program Coordinator saying she was still looking for a class rep to speak at our graduation. I don’t know if I had soaked up too much sun or was on a high on baba ganoush and running adrenaline but I volunteered. As I sent the message I both regretted it and applauded the strangely uncharacteristic act. I think deep down I felt that I wanted to express gratitude to all who have helped me and my cohort classmates survive this year. I also want to let my cohort know what bomb nurses they are and how thankful I am to have done this year with them. This year has been the craziest, most challenging, worst and yet most rewarding year of my existence. What is one more challenge?

I spent the rest of the day in go-mode. Laundry, food prep for the next couple days of work and for DJ, clean, answer e-mails, and start a draft for a speech that I hope I make it through without vomiting on stage. We had our FINAL class March 22nd. We decided to do a massive potluck to go out with a bang. I made an array of veggies accompanied by pita chips and popcorn (since my coworkers find my obsession with popcorn quite hilarious).. I had to stay true to character.

I and DJ worked the next few days. I then had the weekend off! Sunday night, DJ was hankering some In n’ Out. When you have an In n’ Out craving there is only one thing that will satisfy: In n’ Out. I had already meal prepped and was craving my massive salad awaiting me at home, but I tagged along so we could have some extra time together.

Monday night= BEST night of the week. Bach time!!!! Y’all this season though. Too many thoughts… I won’t even get started. But jeeez la freaking louise. It is something! Per usual, we make our giant mega cookie out of pillsbury cookie dough. It’s tradition. It does not feel right to have bach without it. We literally refer to it as “Mega” like another family member. “Hey Deej, can you bring me mega?”. This night I had to go to bed immediately after Bach since I worked three in a row (including that Monday), but I relished the couple moments I had in between sleeps.

After working overtime and tryna’ just keep my eyelids open, I decided to do my old tradition of getting a solid workout in after breakfast and then heading to Peet’s. My heart fluttered as I had set aside this day to finish up my speech. It didn’t take as long to write as I had anticipated. Once it was finished up and I saw my good ole’ friends at Peet’s from back in the NCLEX studying days, I hit up the local TJ’s to see what was cooking. I went in without a grocery list. You see, you don’t go to TJ’s with a list, you let TJ’s tell you what you need.

I also went to Sprout’s to stock up on some carbonated beverages.. I go through stages where I CRAVE soda. I try to stay away from anything with aspartame (minus the diet coke from a couple weeks prior 😉 ). Some of my faves include Hansen’s and Zevia. Many don’t like Zevia because of it’s aftertaste (totally get it), but I’ve been hooked on it for years.

Friday, the evening of the 2nd, we stopped by DJ’s Dad’s house to visit with his family. I have missed them horribly! A healthy dose of family time was just what I needed to survive a pretty heavy weekend in the hospital.

This past Sunday the 4th, DJ had to get up with me under the full blown moon (4:30 am). I was so excited about this that I had to snap a shot of us taking the elevator down to our cars simultaneously and had someone to eat breakfast with!

 

After a super tiring work weekend (still recovering), we had Indian last night that I picked up from TJ’s with naan and white wine. Such a great combo. We lazily glued ourselves to the couch and the television as we watched Arie the Asinine make an absolute fool of himself. Y’all I hate to talk bad about ANYONE, I give everyone the benefit of the doubt, and actually thrive off “difficult personality” patients, but Arie.. I can’t deal with him. And I’m pretty sure he is a sociopath. He exhibited ZERO empathy during that break up. Ugh, my heart broke for both girls. Ok I need to stop before I get myself in trouble. *Deep breaths, deep breaths*.

On a totally unrelated note, my favorite (and only) pair of yoga pants that I’ve had since Freshman year of college got a hole in them this week. An unsalvageable hole. Needless to say, I am in need of a shopping spree, much to hubby’s dismay. It’s gonna be hard to find replacements for those beloved pants, but alas, it is time to invest in some new basic girl attire.

A Quite Ambiguous Life Update!

Hey y’all!! I haven’t done a hum-drum recap post since last year?! I’ve done our trip recaps, Friday Faves, and EVEN a recipe…. but not a recap. What. is . happening?!

Yes, This is Us unleashed one of the most dramatic, tear-jerking episodes in probably history of television on Sunday. I think I need to see a therapist after that episode. But we won’t get into it. It’s so good, so heart-wrenching, so real…. it hits on a very visceral level for me.

Anywho, I want to document just some real quick recent happenings and answer everyone’s questions about, “What’s going on, what’s the school situation, what the lowwww down?”.

Once we came back from Texas (yes, I am going THAT far back), I worked January 2nd and had to take my first ever sick day the 3rd. Darn, I almost made it a full year without taking a sick day! The 4th and 5th I spent resting and worked through that next weekend. On that weekend, my sweet coworkers threw the sweetest surprise “potlock” for my birthday. It touched me to literal tears. They brought in all kinds of goodies & cupcakes. I’m so thankful for them.

On the 11th, we had our preliminary presentation and the research scientists seemed to love it! They gave us tremendous feedback, so now we just have to make a few adjustments and we’ll be all set. Our official presentation is March 21st. I will be prepping hard for it before then! PS. I love our cohort education days because we always get a flamin’ breakfast of croissants & coffee! One time we had smoked salmon with capers (my weakness)!

March 7-12th we worked hard so we could enjoy our vacation to San Diego January 13th-17th. Here are Part One, Part Two, and Part Three if ya missed um 😉

We’ve been craving comfort food lately as “winter” comes to an end (I feel embarrassed and rude saying that to my kindred midwesterners)….stay warm, friends. I empathize, I really do!

I have loved continuing to make cod. One of DJ’s favorite’s was a meal with cod, corn grits, asparagus, okra, and zucchini with marina/parm cheese. Now, it does not get more midwest than this folks (unless a casserole was involved 😉 ).

One of my current projects is reading through “must read” books list. So far I have read The Giver, The Lovely Bones, and Fahrenheit 451. Would love your suggestions too! I think next I’m going to read Wuthering Heights and The Book Thief. Lemme say though.. all those gosh darn stupid reality shows are vying for my serious attention on Monday nights, so tryna’ find that balance 😉

(I’m still making my way through the Harry Potter series, but have been falling asleep the second I hit the sheets lately!).

On the 27th, DJ’s twin sister (WHO JUST MOVED HERE!!!!!!), drove up to SJ to have some breakfast with us. I can’t explain how excited I am that she’s here. You might remember her from when she visited us here. (Scroll to end of the linked post).

Anywho, we had to take her to the infamous Bill’s. We just had one open within a mile of our apartment (EEEEKKKK!!!!!) I am freaking out.

Amy headed back to the city in the afternoon after hanging out at our apartment for a little bit. This was one of the first Saturdays in months, probably all year, that DJ and I were both 100% free. We spent the day lounging, napping, took a walk, and relaxed. It was absolute perfection. We kept saying how refreshing it was to have a full day like that. It doesn’t happen often- I actually can’t even remember our last day like that.

On Sunday the 28th, I finalllly had a Sunday off of work to go to Church (EVERYONE CHEERS!). Lemme say, it was SO nice being able to worship with my community in person and not be listening to a podcast sermon on Sunday.

After Church, I went to lunch with my girlfriend Tammy that you all know probably well my now, and her husband, Ben. (DJ couldn’t tag along, but I brought him home some grub!).

We went to Mendocino Farms in Campbell. This may be our new local joint. I am obsessed!!! There are so many phenomenal pesce/vegan options!!!

I was craving a great salad. I had their avocado & superfood ensalad with butter lettuce & romaine, curly kale, quinoa & millet, housemade superfood krunchies, black bean, roasted corn & jicama succotash, red onions, cilantro, Cotija cheese, grape tomatoes, avocado with chipotle vinaigrette. There are no words to describe how yum this was!

Even better yet… their sides.. the curried cous-cous and marinated beets were so savory. I am craving them again. I might just have to go in tomorrow to get more.

Tam had the Mary’s Chicken Salad with shaved, roasted Mary’s free range chicken breast with balsamic glaze drizzle, butter lettuce & romaine, nitrate-free applewood smoked bacon, crumbled blue cheese, avocado, grape tomatoes, red onions, hard boiled egg with mustard vinaigrette. Good mendocino heavens.

There was a Trader Joe’s plopped right next door, and this is where I had my epiphany that Trader Joe’s may be the greatest place on earth.THEY EVEN HAVE SUSHI!

For one of my birthday gifts, I received my first ever Fab Fit Fun box. This is allll over the place social media wise, but I’ve never pulled the trigger. I was thoroughly impressed with the box, and can’t wait to use the products. I’ll let you all know how they all work out.

DJ is playing in a basketball league called the “Enginerds”. I’m not sure if I’ve mentioned this on the blog before, but DJ was (is) a tremendous basketball player. He isn’t hanging up the shoes quite yet as he is playing in a local league every other Wednesday. I’m obsessed with the name of their team (so Bay area)- The Enginerds! Lol.

I have been thinking lately about doing a meal prep post about how I have been meal prepping for my twelve hour shifts! I never have really shared my prep days for work, but why not?! It took a while to get my routine down, but I think I finally have it figured out to stay full and stay nourished!

On January 30th, I had the unexpected couple of hours off as our unit was over-staffed. I instead was able to go to work at 11:30 am. I walked into the shining sun and gorgeous fountain. That never happens. What a glorious day that was!

Shall we chat Super Bowl on the the 4th?! Our unit was not about to neglect the celebrations. We had donuts, chips, and pizza galore. I worked extra extra extra hard to get my work done so I could catch a couple glimpses of the game. They were small glimpses, but I did get to watch JT do his THANG!

Yesterday, the 5th, I was able to squeeze in a gorgeous 10-miler. To be honest with y’all … doc says I need to chillll on the mileage. I’m trying, but struggling cause it’s the way I cope with my stress. My body isn’t handling it. I am going to try to incorporate more strength training & cross training > cardio.

Anywho.. these February blooms along my runs have been gorgeous. It is finally starting to warm up a bit again!

Lately for dinners all I have wanted is warm comfort food due to the weather and perpetual ill feeling. Today after a great Insanity workout I was craving my giant refreshing salad with it being 72 degrees outside. I always love putting a veggie burger in my salad with hummus & some balsamic vinegar. MMmm mm!

Let’s talk future now. I have an interview February 14th for a doctorate program. Gosh, I want this so badly. I was accepted into a local program here, so that’s a possibility too (it’s a master’s program). I am waiting to hear back from one last school in Nashville. I’m not sure what this year holds for us.. it’s all a big ole’ question mark… we are just trusting God with it all. He has proved faithful time and time again. DJ is still loving his job in marketing for the SJ Giants, and will probably look into getting his masters next year. I am excited and hopeful to see how this year unravels! Lots of questions will be answered in this next two months, and I am hoping to share some fun (and definite) updates with you all.

Crazy Wildfires & DJ’s Birthday Celebrations!

Happy Thursday, ya’ll (well, Thursday by the time anyone reads this- although it is currently Wednesday evening)! How’s it kickin’?

We said goodbye to one of my favorite charge nurses last week; I was super sad to see her go 🙁 (This send off banner was too funny not to share though!)

DJ’s birthday was October 6th!!! I can’t believe I am just shooting this post up now. Sheesh! Anywho, we had a gift card to Open Table that was put to phenomenal use at the local Forbes Mill in Los Gatos!

This sweet man.. I would usually not pull my phone out at places this nice to snap food pics, but he convinced me that it was just us two and it wasn’t a big deal…. I obliged pretty easily 😉

We started with the giant prawn cocktail. There is nothing better than a fresh shrimp/prawn appetizer. It’s easily our go-to!

We also tried their crab cakes! They were tasty, no denying it…yet a far cry from the cakes we had in Baltimore.

I also had their generously sized beets and macadamia crusted goat cheese salad. It was one of the best I have ever had,  and it’s so simple to throw together! I definitely will be recreating this at home.

DJ tried the ULTIMATE surf and turf with a combo of waygu and lobster tail. I sampled the waygu because it’s supposed to be the highest quality of meat, and I couldn’t let the opportunity pass….. butttt I had an aversion to the flavor. After not eating meat for about four years it didn’t do anything for me.

We also dabbled in a side of creamed spinach.. if it’s on the menu you know we are jumping on it! We absolutely loved it. I still think the creamed spinach from Ben and Jack’s in New York is the best of all time, but this is not far behind.

And I couldn’t pass up the epic, rave-worthy, award-winning scallops….. I think the only ones that contest are Farallon’s in San Francisco. Gosh, just the thought is making my mouth water all over the darn laptop. They were served over forbidden rice- a new obsession of mine officially. Has anyone had this magical grain?! It’s ah-may-zin!

I could go on for days and days about how amazing DJ is. He is a man of God, handsome, humble, hilarious, loyal as they come, my rock, courageous, intelligent, witty, intuitive, hard working, dedicated, and genuine. Those qualities just scratch the surface. I don’t know why God blessed me with such an incredible man, but I won’t argue with His provision 😉

The days are all kind of blurring together from the rest of the last few weeks. I do want to share of my favorite snap shots from random runs and of course, even more random pics of all the foooooodddd we’ve been scarfin’!

The fall blooms are just as gorgeous as the spring blooms!!! Even though we don’t have the leaves change like back in the good ol’ midwest, we still have the beautiful array of flowers to admire in this season.

Unfortunately, my autumn runs had to come to a quick halt when the wildfires started last week. It smelled pungent with smoke in the hospital (which is closer to the fires than our apartment is), and then eventually the air around our home was saturated with the unescapable burning scent. In the morning when we woke up our eyes itched, our throats scratched.. it was surreal. We just keep praying for everyone affected by these horrible fires. I truly hope the madness stops soon and mother earth cools her jets.

Back to the random food mess… I’m still on the egg kick for suure. (I put some of the leftover creamed spinach on a piece of toast and then the egg on top, good heavens).

I also have been CRAVING a Whole Foods trip. Since they have always been ugly pricey, I usually only go every once in a while. However, now that they are bought by Amazon their prices have gone down tremendously!

Using many of the ingredients from whole foods, I made a fall salad that I’m ridiculously obsessed now. I was inspired by Stein’s Beer Garden’s salad. It contains jicama, roasted butternut squash, quinoa, light craisins, and I use a homemade apple cider vinaigrette (with some apple cider, a touch of oil, and a touch of sugar).

Another thing I, and the rest of everyone, has been loving is spaghetti squash! Ugh, it is SO good. I have been mixing it with vegan butter, vegan meatless crumbles, and a touch of parmesan on top. So easy, so scrumptious. I know many of you out there have tremendous recipes for the spag-squa, please share em’ with me!

And I’ve been whipping up a lot of capreses for DJ. This is one of his favorite snacks and the heirloom tomatoes were on sale at Whole fuuds and, oh man, were they ever fresh!

I’ve been decompressing from the studying with lots and lots of running. I have been mixing in Insanity workouts, but as soon as the smoke settled and the air cleared I booked it back outside.

Something else I’ve been devouring lately is smoked salmon on pita with caramelized onions and a fried or poached egg. This has been hitting the spot and has been a great high protein/healthy “comfort food” during this super stressful time.

I took my GRE yesterday …

I crammed for about two and a half weeks in my time off work for the exam, and just didn’t score as well as I would have liked on the quantitative. Algebra and me do not exactly tango in the moonlight. Ask me to tell you the symptoms of Moya Moya or the proper medication to treat tuberculosis..we can chat. But I don’ t have the faintest idea what in the Westeros math has to do with it. It’s not even real math. Like I get 1+1=2… or me +math= disaster….. but I will be the first to admit I do not know how to solve “If Tommy had five oranges and Shelly had 12 and 2 were taken away and thrown at a cactus, why is the square root of the Eiffel tower a bag of potatoes?!”

I get that people study for a looong time for this, but only one of the schools I’m applying to out of five require it. I just don’t think it’s worth it to slave over the study material when majority of MSN-FNP admissions don’t require it, and the app deadline for the one that does is November 1st. (Which is actually great because then I don’t even have the option to retake it for now). Now I’m rambling. *clearing throat*. Oh well, que sera sera.

HOW ARE YOU?!?  I am jumping off the crazy train now, and heading to bed before an early morning wake up call. Muah!

A Perfect Pittsburgh Wedding!

Hence I dreamt of all things vegan bratwurst and fireworks as I slept a majority of the day away. DJ had to work all day anyway, so it worked out well.

I am stoked to share about the epic wedding this past weekend!

On Thursday morning I quickly packed for my flight. I never pack the day of, but since I worked nearly four twelve-hour shifts in a row leading up to it, the last thing I wanted to do when I came home on Wednesday night was pack. I Ubered to the airport and had the most phenomenal discussion with my Uber driver. She gave me such great encouragement and actually we talked about the blog a bit. I gave her my blog name, so if she happens to read this I send her a big hello and thank you for her sweet conversation.

I took an American Airlines flight from SF to Chicago to Pittsburgh. My first flight, the long one, had selections for movies still in theaters! I was surprised! What are some of your favorite airlines?! I was thoroughly impressed with American.

I didn’t end up watching the movies, but took that time to type away for my last blog post. It was the definition of therapeutic. So needed. As soon as I pressed that “publish” button I felt like I could take a deep breath. It was metaphorically, yet tangibly, cathartic to just get it all out. It was as though I untethered the shackles of difficult moments and trials from mind, and grasped ahold of them- drowning them in truth and light.

It’s weird, but only when I travel do I really crave pop (or soda, if you aren’t from the midwest). I even received a whole can– wooohooo. American Airlines stepping up the game. What is your go-to flying beverage of choice?

The family I sat next to were headed to Sutton’s Bay and Traverse City from Sydney, Australia. Small world! I gushed about my love for the quaint city and gave them a mile long list of fantastic restaurants, highly suggested Bardon’s epic ice cream shop, and emphasized the need to go to the Sleeping Bear Dunes. Their little girl fell asleep on my shoulder at one point, so precious.

I lucked out and was assigned the window seat. However, I did have to monitor my fluid intake, otherwise I would be getting up to go to the bathroom every five seconds per usual. Road trips can be a bit of a pain with me because I tend to chug water on the heels of my morning joes. Zero chill.

I barely made my second flight because our first one took off late. I also misread the SUPER confusing signs to my gate and ended up having to go through security again. I was definitely that person- sprinting through the airport with bags flying and a crazed look on my face. But I made it. I even had a few moments to scarf down my airport sushi just in time to board– hoooolllllaaaa.

On my second flight I sat next to a Russian man who is an expert in acarology (the study of mites). He was giving a lecture at OSU about it. Pretty quickly into our conversation he asked me, “Are you afraid of death?”. I was taken aback but it led to some interesting conversation.

I Ubered from the airport to the hotel. It was about a forty minute drive. I spent the entire forty minutes chatting with a die-hard Pittsburghian about the day in the life. If anyone wants to be convinced by someone that Pittsburgh is the best city to have ever existed in all of history and all time to come, this is your guy.

I arrived at the Hilton Garden Inn in Cranberry at about 2 am. It was a very nice Hilton! I highly recommend staying here if you need a reasonably priced place to stay in Pittsburgh.

I couldn’t sleep one wink on Thursday night. Actually, that’s a lie. I fell asleep around 5 am and slept until 6 am until my neighbor decided to blow dry her hair. I couldn’t fall back asleep. I chugged a cup of coffee & decided to run to try to wake up my body. Also, does anyone else just love hotel coffee? I swear there is something about it that just makes me giddy (and not just from the caffeine). Maybe it’s just the adrenaline of travel that is associated with it and the good times that leave a great taste in the mouth.

I then headed to the venue at Freedom Farms to help the rest of the girls set up for the wedding. I was stoked to see Lyndsay, the bride to be! She is one of my dearest friends since middle school. We attended youth group together all the way through high school. We have literally been through it all together from sharing countless laughs, tears, navigating boys (oh boy), going on trips in the US to the Dominican Republic together, growing in our faith, eating absurd portions of pineapple pizza at the pool in the summer, strumming our guitars in worship and just in our spare time, splitting a dozen donuts in one sitting at a dive in Indiana, cheering each other on in track meets even though we were competing schools, getting ready for a plethora of church events and getaways, and she was even the one who sat with me in silence after my dad passed away, my deepest heartbreak. She is as loyal as they come and has always been a role model of mine. I love her deeper than just a friend, she is a sister to me.

We were just missing our Clair, our good friend who is having a baby and was due on Lyndsay’s actual wedding day! The babe still hasn’t came, but literally ANY second now. Eeek!

I was honored she asked me to be a bridesmaid, and I was beyond thankful (and shocked) that I could make it. I also haven’t seen her since my own wedding– two years ago! The reunion was quite special. I quickly got to know the other amazing girls in her bridal party and exchanged hugs with her family. They were like a second family to me growing up. I and my dear friend, Sarah, arranged the bouquets for some of the tables. I loved doing this. In another life I’d like to be a florist.

The venue was incredible. I wish I had taken more pictures, but we were busy bees getting ready for the big day and just soaking up the precious moments! If you live in Pittsburgh and are looking for that rustic, yet elegant, venue- THIS IS YOUR PLACE. It was straight out of a fairytale.

All of the creative touches actually outdid Pinterest. Lyndsay ironically was the first person who I ever heard about Pinterest from! Ahh, to think back to when we both started planning our weddings all those years ago.

Below is a picture of all the bridesmaids & Lynds (in white). I think this picture sums us up way better than the more normal ones we took 😉 Gosh, it was the best bunch of ladies.

The rehearsal dinner was in-cred-ible. She served Greek food with wide arrange of marinated olives, hummus, baba ganoush, tabouli, pita, lamb, chicken, feta, dolmas, rice, and finished off with the best greek desserts ever (naturally I tried them all- the baklava was baklavamazing).

I scarfed it all down before I could grab a picture. Once I finished the food I decided I needed to find out where this was catered from. Lyndsay said it was actually her good friends, a life mentor, (with no Greek heritage), who cooked the food. I was blown away. I found the lady and by occupation she is a physician’s assistant. She said she just grew an interest in Greek food and was determined to learn how to cook it. We chatted for a while about cooking (she’s my new inspiration) and about medicine. In a little over twenty four hours I had met a diverse number of new, unique, and wonderful people.

Friday night we headed to Lyndsay’s to do nails and spend some last minute reminiscing before she took the plunge into wedded bliss. Ugh, I love her so much.

Saturday morning we went to the hair salon to get that hair did. It all went smoothly and was a blast! We were in and out in about less than hour. CRAZY!

We all did our makeup together at the hotel and then packed up to go to the venue. Things were getting REAL!

I am obsessed with this photo below because this is just Lyndsay: All dressed up and effortlessly gorgeous with her yoga mat and Nalgene bottle in hand. She literally drank from the Nalgene at the venue all night. I love how true to herself she is in any situation. It’s always been something I’ve admired about her.

We took all our pictures with the party which may have included chasing a chicken, but we did not catch it, unfortunately. We also all gathered before the wedding to witness the magical first look! It was the type of first look that didn’t leave a dry eye to anyone who witnessed it. The day emulated the beauty of the union- it was supposed to rain, but the rain held off and the sun made it’s presence known, wrapping each guest with the warmth and glow that radiated from the love of the couple.

The ceremony was the most Christ-centered, loving, sweet, and beautiful wedding I think I’ve ever been to. The message from the pastor (Lyndsay’s father) resonated with me big time. The way Joseph looked at Lyndsay melted all of our hearts. The whole day was PERFECT. I know I have used that word far too much, but seriously- there is no other way to describe it.

Reuniting with friends I haven’t seen in forever was one of my favorite parts of the weekend. I missed these people beyond words. Seeing them all made my heart so happy. <3

And the rest of the night was followed by dancing our tails off.

At the very end of the night, all us bridesmaids and Lynds had an impromptu dance to “Marry You” right before the sparkler send off. As cliche as it may sound, it was seriously a cinematic movie moment, and I can’t imagine a better way to send off my best friend, my sister, into her next stage of life.

That night I left for the airport around 3 am. Needless to say I slept every minute on each flight on the way back. When I arrived around 10 am (SF time), DJ picked me up. I went back home to sleep, but in the afternoon we went to Bill’s to have a nice breakfast together.

It was a quintessentially perfect wedding weekend that I felt blessed to be a part of. Joseph and Lyndsay are a tremendous couple that already are changing and inspiring others’ lives.

A Super Quick Update!

HEY YA’LL!

Long time no seeeeee.

I have a sweet & short post about what we have been up to lately (well, relative to my other posts) . I received a text from my mom yesterday saying she was concerned since I haven’t made much contact with anyone the last week or so. NO WORRIES- all is well & good just busy, busy.

It reminded me that I haven’t updated the good ole’ blog baby in a while. I need to write an entirely separate post soon about what I have learned this past month in regards to nursing, faith, and dealing with some intense emotional battles. It’s been nothing short of a glorious, ferocious, awful, and beautiful rollercoaster.

That will come soon… I travel to Pittsburgh this weekend so I’m thinking the flight may be a good time to unravel that one.

But for now, for all our friends and family that are all, “How the heck are ya, where the heck are ya, and what the heck are ya up to?!” … this is my response!

I graduated from the FACC series class last week (Foundations of Acute and Critical Care Training). That means wayyy less online work, aka less free time sucked up, and more consistent 36 hour weeks in the hospital rather than sporadic classes mixed with shifts. HALLELUJAH! I learned so much through this series and while it was a major time leach, I am incredibly grateful for all I learned.

. Hahahahha. I know it’s bad, but I couldn’t help but share. Our FACC leaders definitely have a good sense of humor (which I have learned is entirely necessary in nursing).

DJ’s doing amazing at his job working with the SJ Giants in marketing. I admire him beyond words with the way he has handled this job and the integrity with which he also handles the challenges. He has been an outstanding leader in our small group through church as well. Unfortunately, I haven’t been to our small group because of work, but DJ has been leading a good deal of the sessions. I am just thankful I have him as my rock as we go through this hard, hard year.

We both are in such similar places of navigating the season of NEW. New jobs, new coworkers, new schedules, new responsibilities, new frustrations, and new memories! We still hardly see each other but soak up every second when we do.

Many evenings I get home and go straight to sleep after a 12 hour shift, and can’t do much the night before a shift considering I have to get up at 4/4:30. But some nights when I don’t have to go back the next day I try to just soak up that alone time.

One of my favorite ways to enjoy those quiet evenings are in my feng shui hangout eating sushi, drinking some wine, and reading or watching a reality show. Call me basic if you wish, but these sushi rolls are ANYTHING but basic.

A place near our apartment called Azuma can be delivered through GrubHub. I oscillate between the 49ers roll (eel, avocado, and other assorted fish), and the sunshine roll (lemon, tuna, eel, green onion, and avocado)…. with brooownn rice. Brown rice adds a texture and heartiness to the roll that I love.

It’s all so delish. Probably the two best sushi rolls of my life. But I have a problem. When DJ and I went through the budget/spending this month I embarrassingly replied “Sushi” when he asked what each purchase on my card was from. Whoops. Girl’s gotta eat. #sorrynotsorry. #sushinotsorry.

Speaking of eats! Here are our other recent ones..

I have been LOVING my turmeric cauliflower mashed potatoes with black bean burgers, hummus, and parmesan asparagus. You know I get on kicks, and this is the most recent! I also love topping it with basil.

Flat-out pizzas are always a good go-to. If you’ve never tried a good flat-out pizza, it’s definitely worth a try- especially if you are a lover of thin crust pizzas! Each flatbread is only 100 calories, and then I top with vegan cheese, tomatoes, basil, and oregano to make a mean vegan margarita.

It’s also been a while since I’ve made Indian. When we lived in our Toho in Indiana this was one of my favorite meals to make! DJ loves it too. For myself I make a vegetarian version with dosa, idli, and tons of curry laden veggies. For DJ I make chicken tikki masala with jasmine rice and naan. Who doesn’t love naan?! If you don’t know what naan is, you don’t know what life is, so please stop reading this and go try some naan.

Alsooo, I may have casually ordered a jillion gallons of PB2 on Groupon. It was a steal!!!! Pb2 is so dang expensive, so when I saw this Betty bargain steal I had to jump.

Ok, ok you caught me. When going through the budget and spending it goes like this … Sushi, sushi, PB2, sushi, overage data fees while blogging about sushi and PB2, sushi.

I’ve also been running a ton to deal with my stress. Lately I’ve been listening to podcasts rather than music. Just wait for the next Friday Faves, folks, and I will divulge some of my loooves. Anyone have favorites out there?!

Last Thursday I got my hair did! Wooohoo!!!! The roots were so bad. I am in the wedding Saturday, so I felt like I had to be somewhat presentable for someone else’s forever wedding photos.

After getting the roots all touched up and a nice (MUCH NEEDED) trim, I was craving me some boba. Luckily, next to the Aveda salon on Santana row there is an amazing Boba shop It hit.the. spot. Especially because it was way too hot that day. Raise your hand if you love boba?!

FINALLY one of DJ and I’s days aligned for a day off last Friday. We started our day off by sleeping in until the cows came home.

Then I was craving boba, … so… boba.

We also decided to try out Game of Thrones. Holy maloly- it’s entralling! Does anyone watch? Yes, it’s pretty dang explicit, but I know most shows are out of the gate to get more ratings. The story line is just insanely good. Any thoughts?! We love it.

For dinner we tried the newest addition to our little Cupertino downtown- Stein’s Beer Garden.

I loved the feel. It was beery unique! There is a literal wall lined with faux foliage in a modern, industrial environment.

The staff was super friendly off the bat. While there was a bit of a wait, it was worth it.

We started with complementary pickled veggies in a jar. I don’t know why more places don’t do this! It was such a great mini app. I didn’t even miss the typical starter bread (GASSSSPPPP!).

I’m not big on beer, but felt like I should at least try one, considering it’s in the restaurant’s name. The only kind I really like that I’ve tried are Sours. Their Mango Gose was surprisingly refreshing with the meal I had!

I tried the roasted beet & smoked salmon salad with arugula, chevre goat cheese, and spiced pecans. It was fantastic! (Also- PS. I just have to tell my Aunt that she would LOVE this place, it’s so up her alley, so ya’ll need to come back soon!).

DJ tried the Yucatan Pulled Pork Sliders with chili paste marinated pork shoulder with chipotle aoili chicharon, cilantro slaw, jalapeno, and roasted tomato salsa.

The rest of the night we flew through a couple episodes of GOT, then we both worked all weekend.

Fast forward…

It is currently Wednesday evening, I’m on the heels of 4- 12 shifts nearly in a row. I’m not sure my mind is all here and this post probably has a million errors haha. I’m haphazardly watching bachelorette and realizing I have a million things do before 10 am tomorrow. Oh well. It will get done, it always does.

I leave tomorrow for Pittsburgh and don’t return until Sunday. I plan during that time to catch up on blog comments and your blogs too (although, I’m not sure the 7 hour traveling day in the air will have wifi?!)..

Monday is back to work and then I won’t see DJ again until Tuesday, but he works most of the time too. Also- my best friend’s baby is due this week, and I can hardly stand it. This time of life is wild, and hard, fun, challenging, and rewarding. I know we will look back on this year and see it as one of the most transformative for the both of us.

Sister’s 21st Birthday and Best of the Bay

Woooowww. Long time, no talk! HOW ARE YOU ALL?!! I am totally blog-deprived.

I know I say this repeatedly, but this is truly the most challenging and busiest time of my life. How people do this residency program with kiddos is beyond me. I finally have a day off, and I have ZERO plans but to blog, catch up on my to-do list, and eat Smoked Gouda Triscuits and gruyere cheese (hello heaven). DJ is at work, so additionally I fully intend to spend the whole day in my PJ’s, unless I go to the store for cookies for bachelorette night, but then, and ONLY THEN, will I put a bra on. Catch my drift? Ok- let’s get to it.

Since my last recap (which was about the end of April), all I have done is work, cry, meal prep, cook, cry, run, laundry, and cry…. so yes.. (I do plan on making a post about how all that is progressing soon enough, but for now let’s share ALL the gooooood!).

My sister, Halston, and her boyfriend, Kevin, came in town last week, and they left me with some awesome memories that I am one eager beaver to share!

I started out last Friday (5/19) by having my new obsession for breakfast (avocado smoothies) with homemade breakfast cookies (yeah, those recipes will be posted eventualllllly). I love sitting in my egg basket swing from Target and soaking up the sunrise with my Bible while sipping up my avocado smoothie and breakfast chocolate chip cookies. Does not get better than that, folks! My outdoor area is my “feng shui playground”.

Since I had that Friday off, I food prepped to have at least a couple options for my sister and her boyfriend and my hubby for the week! I made roasted veggies, eggplant parmesan, tons of shredded chicken, roasted parmesan multicolored potatoes, and vegan joes (my sister is also pescetarian, but loves vegan foods too!).

I also cleaned the heck outta’ the house, which felt gloooorious!

When I picked up Kevin and Halston from the airport, they unpacked a bit, and then I had to show them around Main Street Cupertino, naturally. We had tons of avocajoes for dinner and I had to hit the hay early for work.

While I worked the whole weekend, Kevin and Halston went to an SJ Giants game with DJ and then Church Sunday too. Even though I couldn’t participate in the weekend festivities, I’m glad they had such a blast!

Sunday night, my fave duo surprised us by also cooking some additional food for the week (we flew through all the food I made!)- Kevin whipped up some scrumptious fettuccini chicken alfredo for him and DJ, and Halston made the most delish tofu lettuce wraps for us. They spoiled us!

Monday I had off, although DJ had to work, but the three of us decided to go to Santa Cruz! This was their first time EVER in California, so I had to give them the authentic beachy town experience.

First we stopped by a coffee shop that carried the famous Marianne’s Ice Cream to grab a cone for Kevin. DJ and I have had it before and the ice cream is velvety smooth and creamy and dreammmmyyyy.

And I am still steadily making my way through HP, ya’ll! Just in case you are just popping in for the first time, my dream is to read through all of Harry Potter then go to HP world. Big bucket list dreams right here.

After soaking up all the sunny rays ….and Halston aggressively avoiding getting any sand actually on her towel (or herself) — (anyone else like that? Hahaha)—….. we decided to go grab a late lunch/early dinner on the pier.

I personally think Stagnaro Bros. is the best place for half price apps. I went here with Rachel last summer and it did not disappoint one bit.

Halston ordered their appetizer sampler platter (clam strips, shrimp, etc.), Kevin tried their lobster quesadilla, and I jumped on their smoked salmon bites.

It was all tremendous. I am truly salivating right now at the thought. Their tarter sauce was delish with the sampler platter, the lobster quesadilla was phenYUMenal, and the salmon bites seriously reminded us of eating hearty meat like smoked ham or steak bites. Whatever sauce they use may contain illegal substances, because they were addictive. SO GOOD.

Halston was a bit cold on the way back to the car. I think I wear emotions on my face pretty clearly; she is a walking emoji! Ha!

Whenever there is a crowd gathered by the edge of the pier, you can bet you will find a bunch of little sea lions providing the daily entertainment.

We zoomed back home just in time for Bachelorette to begin!!! I was stoked to have company to view the Bachelorette with. DJ and I used to have massive parties back in Indiana for bach. nights and now it’s usually just the two of us. It felt good to get ALLL the goods out, have multiple people’s input, and the hum of a full living room.

Anyone else watching? Thoughts? I just adore Rachel. This show gets goofier by the season, but I truly hope she finds her happy ending.

Monday night at midnight Halston and Kevin went to Yardhouse on Santana Row so Halston could get her first legal drink. She got her favorite, a pina colada, and a pizza to wash it down! 😉

I had to work the rest of the week Tuesday through Thursday. Halston would get up early with me before work (yes, at 4:30), have breakfast with me, and drop me off at work so her and Kevin could use the car for the day. I just ubered home after. I treasured those mornings together and this coming week I know I will be feeling a bit sad horribly depressed without her here with me!

Tuesday was her TWENTY FIRST birthday!!! How is my little sis this old?!

I need to take a moment and just brag on this incredible human. My sister is without debate one of the greatest individuals to grace this planet. She’s my younger sister, yet she is my role model. She doesn’t care what people think of her, yet everyone loves her. She has her priorities straight with a level head, a strong faith and a selfless love for others. She exudes a zest for life that surpasses most and embodies the most gentle spirit. She is also ridiculously fun to hangout with and is always a guarantee for the most wonderful memories with tons of laughs. She pursues adventure whenever there is a free second, but works harder than most people I know. She is the greatest listener, has wisdom beyond her years, and both an emotional and physical strength that allows her to dominate whatever life throws her way. HAPPY 21st again, seeeester. I love you more than words!!!

We started the epic birthday with avocado smoothies and while DJ and I were at work, Kevin and her spent the day exploring SJ (going to Crossfit and Bill’s Cafe- hollllaaaa!) and had a beautiful dinner at the ethereal Grandview restaurant after!

This restaurant is like you are sitting in a little part of Heaven. The views are indescribable. It’s all terribly romantic, stunning, and the whole experience is absolutely spectacular. I would not want anything less for Halston on her big 2-1!

The beautiful birthday princess and her amor had the most wonderful evening. Aren’t they gorg?! I’m so thankful Kevin was able to come on this trip! He treats my sister like an absolute queen and the two are a perfect pair.

On my way home from work I ubered past Coldstone Creamery to pick up a Peanut Butter Playground cake for Hal, her fave. I fell asleep before they came home, but the missing slices in the morning told me they enjoyed it! (Also, I totally forgot to snap a picture; thank you internet for coming in in the clutch).

He is attending Dental school in Pennsylvania- Hal and Kevin both went to University of Cincy where they met. Hal has one year left, but is studying abroad in Columbia this fall. After undergrad she plans to go to law school. Got it? (There is a quiz on this post after 😉 ).

They loved exploring the city, and graciously shared their pictures with me! They went to Pier 39 (essential), and then made their way to Japan town to meet the roommate. Hal had some Boba on the way. I honestly didn’t even know Japan town existed… I thought there was only China town. Hal and Kevin said the food was insanely good at this place though. DJ and I will definitely be back-pocketing the name for a date night! She didn’t get any pictures of the food though- I haven’t trained her well enough in Blogger ways, lol.

Thursday they spent the day resting up at home and when I came back from work, we all went to Kula!!!! DJ and I used to be obsessed when we first moved here, but there is plenty else to explore, hence we haven’t been in a while. My personal favorite roll is the Kula roll with lemon juice sprinkled over ahi tuna.

When DJ came home from work late that night, Hal made us all pina coladas (cause now she can officially have them!), and we played Cards *mumbles* againsthumanity… I know the game is probs not something I should promote, but goodness gracious it’s too much fun. The game inevitably leaves you with inside jokes and belly laughs.

Friday morning, Hal and I decided to go to Tony Look trail for a nice run (that heckuvah trail that I always take our guests on- here, here, and here). Usually I just hike it with people, but I convinced Halston to run it with me. Haha – she was a trooper.

WE SURVIVED! Even though we were annihilated by overgrown weeds and were convinced we were going to be plowed over by an off-roading car at one point (long story). Once again- Halston’s face says it all! BUT— No mountain lions today! Woohoo!

When we made it back home we scarfed down some grub and got ready to go back into SF for more bday celebrations with all four of us!

Deej took us down Lombard street and Filbert street (The steepest road in SF). You can’t even see over the car into the road below when you are on the very top. It’s trippy and feels more like a rollercoaster than a road!

We parked near Ghiradelli square and perused around here before heading to the Golden Gate.

I realized I had never had my second cup of joe for the day and was crashing. Luckily, Le Marais Bakery came to the rescue. It was no Peet’s, but it did the trick!

We then ubered the bridge to the other side to grab some photos with the world renowned bridge (which just celebrated it’s 80th anniversary! Thank you, Kate, I had no idea!). Very enlightening!!!

After enjoying our time at the Bridge we headed to the Ferry Building to explore and grab some food to tide us over.

Halston and Kevin were dying to try the empanadas. DJ and I still haven’t tried the little guys, but they said they were tasty!

We also stopped at the SF Fish Company where we grabbed the famous chowder! It was super good- not as good as the one’s I sampled with my mom in Monterey, but dang close!

We killed time by walking around SF and then stopping to get bandaids for a horrible blister on my foot. #heels. #beautyispain.

Our reservation was at 8:00 for Venticello Restaurant on Nob Hill. We arrived early, but got light drinks at the bar and just relaxed a bit before our table was ready.

This restaurant is the definition of “quaint”. It is tucked away, easy to miss, but once you step inside the scents of wood oven pizza, baking Italian herbs, and romantic lighting embraces you. The service was excellent and, although a bit chilly by the windows, the warmth from the real burning wood stove was a perfect touch.

We all agreed that wherever we went for dinner, pre-meal complimentary bread was essential.

We also ordered their margharita pizza for an appetizer. The pizza looked satiating, but no one wanted to order it for their main course, so dubbing it an appetizer worked out well. They also had other amazing options as appetizers- we will be back. The pizza was fantastic, but I and DJ prefer when the ingredients are more visible in a margharita- like the mozzarella is still obviously buffalo slices and the tomatoes are sliced. The flavor was still tremendous- it just tasted more like a basic cheese pizza!

For my dinner I tried the scallops. Holy Italian cannoli- the flavors were out of this world! It had a pesto sauce along with artichoke heart puree. Still, Farallon’s scallops take home the W, but these were pretty doggone good!

Taking pictures was a bit hard since the lighting was quite dim, but Halston ordered the gnocci with gorgonzola and mushroom cream sauce, Kevin ordered their spaghetti carbonara with pancetta, english peas, and farm cream sauce, and DJ tried their fettuccini with house-made spicy pork fennel sausage and tomato cream sauce (pictured below). We all loved our entrees and I don’t think there was a bite left on any of our plates!

But you better believe we left room for dessert. After scavenging YELP to find a place that sounded like the golden ticket, we headed to SIFT which promised milkshakes, macaroons, and ice cream sandwiches. When we arrived, the options were pretty limited. Luckily, across the street was Smitten! We decided to give it a go and it was one COOL experience! It’s all organic and the flavors are uniquely delicious like brown sugar with cinnamon shortbread, dough my goodness sundaes, and almond coconut macaroon to name a few. It took us forever to decide what we wanted because it literally all ridiculously yummy.

Halston and DJ had the dough my goodness sundae, Kevin had their vanilla with strawberry prosecco sauce, and I had their cold brrrew with cookie dough pieces pretzel pieces, and brown sugar caramel sauce on top. It was tremendous. The coffee flavor was strong, but the sweetness of everything else provided the perfect balance!

For the evening, we decided to try out a Gatsby themed exclusive nightclub. It’s supposed to take place during the prohibition era, so all of the information is super obscure online and you receive the place the day of the event. I received an e-mail saying “Your appointment to get your watch fixed it scheduled at 11:00 pm at this location”. I was confused for a second and then realized it was all part of the underground, secretive experience. We still had time before 11, so we tried to find somewhere to go dancing. The place we tried out had hardly anyone there yet, so we got stamped and decided to go back later. When we arrived at the Gatsby location, it was a bit….. different than expected. It was a crowd quite a bit older than us, the room was pretty small, and there was no music playing as it said on the website. We didn’t stay long but it was worth the try and we also had the most interesting uber ride of all time- let’s just say SF is like a box of chocolates— you never know what you’re gonna get!

The rest of the evening the four of us danced and then headed back home. It was overall a super fun, yet bizarre in many ways, night!

On Saturday, Halston and Kevin had a late flight back to Ohio. We had one place left on the list that was essential for them to try before leaving: In n Out. Confession: This was my first time trying it too.

The boys ordered the burgers and animal style fries & a shake. Us girls nibbled on their fries and tried the shake. It was all good, but I still prefer Swenson’s back in Akron. If you are from Akron, you would understand.

Halston and I were craving Boba tea as well. We jumped over to Tea Chansii on Main Street to try it out. I had their jasmine green tea with boba and Hal tried their smoothie. We ended the night by finishing up random foods in the fridge- I made Hal my loaded vegan sweet potato, the men quesadillas, and finished up the leftover tofu wraps Hal made earlier in the week (I crave them!).

We took them to the airport in the evening and said our goodbyes. I have had a hard time since they left. I was looking forward to the visit for such a long time, and I can’t believe it’s already over. I will treasure these memories forever.

I also want to take a moment to say thank you to those that have served and serve our country. I know I can fully never understand that sacrifice, but with a somber and thankful heart- thank you. And to the families and friends of those who have lost someone dearly, my thoughts and prayers are with you today.

What a Hoppy Easter!!!!

Happy Friday!!!

How’s it going? I hope all your Easters were egg-cellent!

Hospital orientation ended yesterday (WHERE DID THE MONTH GO?!). All we have now is one more entrance exam next week. This coming weekend is going to be the busiest yet- I work Friday- Sunday with one eight and two twelves. Right now I am taking a quick break from the studies to whip out a post!

Before I jump into the recap I have something tragic to share………..

The legendary red salad bowl is no longer with us.

I realized that the “post 12-hour shift” time frame is very dangerous. Not only did I manage to break perhaps one of my most treasured belongings, but I also set a paper towel roll on fire, went to the store and realized I forgot my purse when about to check-out, and I used the word “one” instead of “won” incorrectly in my Friyay faves post. #Gotocollege.

Does anyone else go into a hot panic when they find errors in their published posts?!? It happens to me every time!

BUT, in other news! I made the last Blue Apron meal in the delivery Friday, and it was out-of-this-world YUM! (PS. if you want a $30 discount off go to the bottom of my About page!).

Has anyone had Cheryl’s cookies?! They are my favorite sugar/buttercream frosted cookies out there. It was the perfect treat after a long day. I also needed to carb up for a big run in the morning!

Saturday

I mentioned in my post last week how I was going to attempt 22 miles to see if I can physically finish the Big Sur marathon on the 30th. I hadn’t been training too seriously considering I didn’t know if my work schedule would allow me to run it. But the race happens to fall on a weekend when I don’t work!

The training run actually went surprisingly okay! I am getting giddy about the actual race! DJ isn’t able to make it with work, so I was planning on driving there solo. Howeverrrrr, my mom called me yesterday to say that she is actually able to fly in! EEEK! This made me happy to near tears. I haven’t seen her since Christmas and to have that support for the marathon means the world.

And naturally, after those 22 miles, I have an abundance of blossoming flowers to share!!

Saturday evening I had the second portion of the Blue Apron meal. Since the baseball season started, DJ has been getting home later- more about midnight now. I spent the evening cleaning the house, doing laundry, and getting organized for the crazy week that was about to ensue. But I had Sunday to look forward to because………..

EASTER EASTER EASTER! What a glorious day. HE IS RISEN!

This Easter was quite unusual for DJ and I. We usually celebrate in Ohio, but for the first time we were here on our own with no family- just the two of us. I actually was pretty dang emotional (lol, what’s new). It all made me super nostalgic for Easters past- thinking of the Sunday services with my family, the far too competitive Easter-egg hunts I had with my sister over the years, having leisurely afternoon spring runs on those Ohio trails, and visiting DJ’s family in the afternoon (oh, and of course, devouring Mom L’s strawberry pretzel salad). I just missed everyone horribly- to a new level since I’ve moved out here. But I was thankful we had our Church family to spend some time with in the morning. That helped a ton. Our church had a fun photo booth, Boba tea, and the best people you could imagine worshipping our Lord and Savior <3

DJ went to Church to help set up at 5:00 am and I slept in a bit (Lord knows I needed it). After service DJ napped and I studied. It was raining outside, so it was the perfect day for naps and studies.

DJ has been fighting off allergies something horrible and wasn’t feeling pictures- but I still had to somehow document the Easter Sunday outfit, right?!

I was itching to cook, but I simply didn’t have time with how much work I had to do for the week to come. We decided to go out instead and make it a date night. We haven’t seen each other much at all lately and our date nights just happen when we can snatch them now.

We settled on Alexander’s Steakhouse. We had been holding out for a special occasion, and I’d say there is no more perfectly special occasion than celebrating our Lord’s triumphant victory. We needed this romantic, quiet dinner to catch up on the last weeks happenings and to just be together. It was lovely, and I’ve reflected on that dinner every time I start to miss him throughout the week.

Alexander’s is known for having some of the highest quality steak in the world called “Wagyu”. DJ didn’t try it this time, but it’s such delicate meat that they actually wrap it in linen. I found this hilarious.

THE BREAD! Once again—-sprinkled with sea salt. Those little croissant things were our favorite.

I decided to try a Himachi shot after scouring YELP for the “must haves”. It was good! It’s basically like taking a shot of sushi (no alcohol or anything- just fish and other stuff that I’m not sure… haha). I make it sound terribly appetizing, huh? I’m not sure I would go out of my way to order it again, but it was definitely worth the experience.

And whenever octopus is on the menu……..

This octopus was fantastic. But STILL, nothing tops Marco Prime’s spanish octopus in Florida. NOTHING.

We also tried their bone marrow after having that fantastic bone marrow at Orchard City Kitchen. If you’ve never tried bone marrow, you must. It is one of the most savory, umami flavors of all time.

DJ ordered a Filet that he gobbled up real quick, so I’ll assume it was pretty great.

I tried their featured seafood dish for the halibut.  MMMM mmm. So good.

And we cannot forget the sides….Lobster truffle Mac & Cheese and Creamed Spinach. That lobster truffle mac and cheese may be one of my top five favorite foods I have eaten in my WHOLE life.

Last, but certainly not least, we couldn’t walk away without dessert. We had their Matcha Cheesecake and, holy canoli, I must go back for more. DJ said he wasn’t going to have any because he was too full…. when he took his first bite he couldn’t stop. (JJ!!!!! We may need to stop in here for dessert when you visit!).

But wait, it doesn’t stop there….

They brought out complimentary chocolates because when you give people free chocolate you win their heart. That’s why Olive Garden is so successful- the Andes mints (ok, the breadsticks may have a touch to do with it too).

Oh, hello, complimentary cotton candy! I did not see this one coming. What is it with all the free cotton candy lately (reference to LA trip with my girls).

OH..before I forget! My sister-in-law’s Corgi, Pool Noodle, is in a big contest and is in ninth place! (Maybe you remember Noodle from the Christmas post?!). Anyway- I thought to myself, “Who better to ask than my amazing blogging Fam?!” If you have a moment PLEASE help her win! This is a huge deal for her little fur baby!
