Lotsa PB Toast & Culinary Corner Bistro!

This past week was so busy, but sooo much fun. I can’t wait to share everything. So April 8th, I whipped up some fish/quinoa/roasted eggplant for myself and some tacos for DJ. Both I have posted more than a zillion times so I’ll spare ya the pics.

BUT what is picture worthy are our severely undercooked tollhouse chocolate cookie gems! MM mm! Peep mega cookie in the background 😉

April 9th after working on some big school assignments, I made a combo of tuna, quinoa, mixed veggies, and spicy mustard. Deej had his taco leftovers.

April 10th, I woke up with some avocado toast/homemade hummus/tabasco while reading some blogs on the balcony.

While reading y’alls posts I got hungry again, naturally- so I made some PB toast with honey. I had to rip this massive piece of bread to fit in the toaster, that’s why it looks attacked, lol.

I worked on some school assignments at Nosh, and nibbled on a kiwi and more PB toast. I’m on a PB Toast kick ever since Trouble Cafe.

In the evening we had a women’s conference at church, and since I was helping with Welcome team we had to be there at 5:15. So, it was either eat dinner at 4:45 or wait until 9:30 pm. Definitely going with 4:45! I made a massive omelette to get lotsa protein with mixed veggies, quinoa, and salsa.

On Thursday April 11th, Deej was out of his overnight oats, so I made him eggs, bacon, and PB toast with honey. This meal was very much inspired by Maureen– she always makes yummy looking eggs & toast in the AM!

And whaddya know I made a slice of PB toast for myself as well! Once again, had to rip the bread to fit in the toaster. (It was bread from a client of DJs and OH so good!).

For dinner I whipped up an omelette again and put some green goddess dressing from TJ’s on top. I put that stuff on everything lately. So good!

In the evening I treated myself to a bath with these bath bombs from artnaturals. They smell wonderful, but still nothing beats a Lush bath bomb!

I do love that each bath bomb has a separate purpose- for example one is for strength, one for energy, and one for calmness.

For breakfast on April 12th, I made steel cut oats with mixed berries, protein powder, vegan chocolate chips and some whipped cream. mmm! I’ve been eating this on repeat for breakfast the last week.

And I made DJ his overnight oats so he wouldn’t have to worry about it when he came back from work. This had steel cut oats, milk, honey, Natural PB from Jif, and a dash of vanilla.

In the afternoon I went on a beautiful walk around the neighborhood.

For lunch I made toast with avocado, egg whites, almond cheese, and green goddess dressing.

I then got dressed and ready for a foodie event–I painted my nails too! Time to brighten it all up for spring!

The place I went this night was Culinary Corner Bistro in San Jose. The owners and chef were incredibly kind & fun! They wanted us to get new menu photos for them and just to promote the restaurant in general. They were cracking up at how often we moved dishes to get the perfect lighting and we even went outside at one point to make a spread on the ground. More on that to come 😅

Culinary Corner Bistro is a pan-pacific asian inspired fast-casual restaurant that has options for everyone from omnivore to vegan.

I’m telling ya- the hospitality was spectacular. Time to get to the food.. whaddya think?

First up- their Crispy Peppercorn Wings with caramelized fish sauce! I didn’t sample these, but everyone raved about them.

Next: Crab Cakes with crab meat, Japanese ginger, and sriracha aioli. These were SO tasty. I love crab cakes, but usually when they are too “fried” I don’t like them. Although these were fried, the inside crab flavor was fantastic- so savory. I could have ate this whole dish.

These ahi tuna rolls with mango, avocado, cucumber, with wasabi-ginger soy sauce were some of my favorite! They were wonderfully fresh, had a tiny sweetness with the mango, and the sauce was really yummy. The bites were small enough that you didn’t have to worry about them falling apart- can I get an Amen, Hunida?!

These truffle sweet potato fries below were really yummy! I wouldn’t say they were my favorite sweet potato fries I have ever had, but they were still great. The sauce with them was a scrumptious accompaniment.

So this Thai mango papaya salad with daikon, carrot, and basil with Thai sauce is something I could eat every single day. It was so light, refreshing, but with so much citrus and sweet flavor and a satiating crunch.

Where my meat lovers at? If you go, you have got to try the Grilled New York Steak Pho with Bone Marrow. I am convinced bone marrow is one of the tastiest things you can eat on earth- so needless to say this was PHOnomenal. I tried some of the broth & noodles- and it was mighty good.

The dish on the top is the shaken filet mignon with angus filet wok seared with brandy, red onions, and butter, which people absolutely loved. The dish on the bottom is the BBQ boneless short rib with a lemon fish sauce. I tried some veggies from the boneless short rib and the sauce tasted far too heavy on the sodium for my liking- I’d veer away from that one – it overpowered the flavor. Many of their other menu items are much more fresh & well rounded with herbs and natural flavors.

One of my two favorite dishes of the night is this mahi mahi below with grilled pineapple and mango salsa. It blew. me. away. SO Good.

And for my favorite dish- the pan seared salmon with garlic noodles and seasonal veggies. The garlic noodles were to die for. And the salmon was perfectly crisped skin with an explosion of herbs and deliciousness.

Soufflé Pancakes & It’s Finally Autumn!

Hey, everyone! I am trying to get us all caught up before a super busy (and fun) week ahead 🙂 This morning is a three cups of coffee type of day, but I’m resisting considering I have to get up at 4 am tomorrow morning. Wish meh luck…. sometimes I wonder how I did that on a regular basis for over a year. I think we left off right after Thanksgiving!

November 23rd was a day of utter relaxation for DJ and me. I used to love Black Friday shopping, but now that online shopping is available I would much rather do it from my home than fight the masses. I ran a few errands and then we had a Thanksgiving Round 2 with all our leftovers in the evening (you can see those in the Friday Faves post).

November 24th DJ and I woke up early, went to our local Target, and then grabbed some Starbucks. I still have to try their new holidays drinks. Anyone try the Juniper Latte yet?

After breakfast I enjoyed a nice long run on a my-kind-of-Saturday-morning grey day!! It actually finally feels like Autumn now. Leaves are falling, I repeat- the leaves are falling!

After working on some school work I was in a mood for a movie. I am never in the mood for a movie at home, but for some reason nothing sounded better that evening. I usually can’t sit still that long, but I was so exhausted after all the festivities, and with the warm Christmas tree up it all sounded perfect. We chose Manchester by the Sea. About twenty minutes into it we turned it off- it was too depressing for the mood we were in. Instead, we tried Crazy Rich Asians, which I had heard raving reviews about. It was a good movie, we enjoyed it- but were sad they portrayed Christians in a such poor light, yet again, through the Hollywood lens :/.

Sunday morning of the 25th before church we tried out Koja Kitchen. DJ and I have been drooling over pictures of these soufflé pancakes for a couple months. After our experience at Cafe Jacqueline, anything with the word “soufflé” is calling our names! Within this last couple weeks just started selling them at this particular location by our apartment… serendipitous I do say!

DJ had their mixed berries ones, and there was not a trace left within a couple minutes. Rarely does DJ rave about food in the way I do, but he couldn’t stop talking about how wonderful these were!

And I concurred. My matcha mascarpone ones were next level fluffy, yummy deliciousness!!! These are crave worthy- the texture & flavor is everything. I don’t know how soufflé pancakes aren’t a staple for all breakfast spots. They are just phenomenal.

After church I enjoyed a shorter run soaking up the beautiful day.

November 26th I went on a nice walk before finishing up my massive paper for the semester. Woohooo!

On Wednesday November 28th I just continued to truck along with the school work with a run squeezed in between.

In the evening I posted a whole bunch of stuff on Poshmark and sold a few items. That always feels so satisfying, especially when you sell something that has just been sitting in the closet for a while!

Thursday the 29th was the same ole’, same ole’ for us with school and work, but in the evening I made more of the mac and cheese recipe from Thanksgiving! My goal is to figure out a vegan version of this. But for now- bring on the dairy!

I classify this as “cry food”: Food so good you get emotional and may even feel the urge to cry tears of joy.

Friday November 30th I went to a new hair salon and had my roots fixed from the fiasco of the last lady now that I’ve nursed it back to health somewhat. I loveeed how it turned out, I paid about half the price as the other place, and definitely spent half the time in the chair. I am so stinkin’ excited about this… y’all know I’ve had a difficult hair journey since moving here, so I’m glad to have found somewhere affordable and high quality! I loved my stylist too- she’s so sweet, fun to chat with & knowledgable.

We decided to have a formal date night for the first time in a long time! We have been kinda all over the place with work/school/etc. this last few months, so our attempt at a weekly date has fallen to the wayside (although we could consider our weekend breakfast tour a date day I suppose!).

We received a coupon from Steins to try out their new menu. If you’ve been following along for a while this place probably looks familiar. We were excited to try it out!

I am always skeptical about a soft pretzel since trying the one at Deschutes in Portland. That one was just too good & has ruined every soft pretzel since- nothing ever comes close! However, this one was solid. Not as good still- but close, especially with the dipping sauces of caraway beer mustard, pub cheese, & tomato jam!

Gotta get those truffle fries!! The lemon aioli they are served with is the most heavenly aioli everrrr.

We tried their creamed spinach too- and was pleasantly surprised how good this was! Typically steakhouses are the ones with the best creamed spinaches, but this is up there for sure.

DJ had their chicken tenders with their super spicy hot sauces. Mmm mm! I used some of the hot sauces for dipping too. DJ said these are some top notch tenders.

I tried their vegan cauliflower & garbanzo bean vegan dish paired with a cold glass of Pinot Grigio (perfect combo). This dish is supposed to serve three people, but when in marathon training….lol.

The dish was… fine. I wouldn’t order it again, probably will go for the fish next time- but it was still satisfying & is a great vegan option for those that are strictly vegan!

We came home, watched Arrested Development, and crashed.

On the morning of Saturday December 1st (How is it December?!), we had to go back to Koja…… the cravings were REAL.

This time I tried their Tokyo caramelized banana option! It was tasty, but I still prefer the matcha mascarpone. DJ had the mixed berries again.

I had a great long run of 16.75 miles after that carb load. I studied the entire time on the treadmill because it was raining outside. I made a solid dent in the books & actually felt better than I thought after the run. In the evening we had all our leftovers, and I spent the rest of the day resting the legs and blogging.

Yesterday, December 2nd, we went to an awesomeeee church service, then I did the first 20 minutes(ish) of this Youtube HITT routine. I ran some errands and then stopped by my friend Sara’s to wish her a happy bday. I worked on school work for a few hours, spent on hour talking to SheIn customer service (do not order from them- it’s not worth it), and last, to round off a nice, lazy, yummy weekend, we watched a couple episodes of Arrested Development.

Today the 3rd, I made a bunch of returns on my Black Friday orders. I ended up keeping two shirts, but it’ll feel good to see that money come back. Right now I’m enjoying this bowl of overnight pumpkin oats with fresh cranberries, a dollop of Fage, & maple syrup. Holy smokes – I might be on a new kick!

The rest of the day is dedicated 100% to studying. Watch out Research & Stats, I’m coming for ya. We leave tomorrow for Disney, so I’ll probably be MIA till next week! Hope this week is absolutely restful, joy-filled, & lovely for each of you!

All we do is Eat, Eat, Eat no matter what!

Got food on our minds, can never get enough!!

Happy Friday!!! I worked my tush off this week so that I would have today to catch up on blogging for a couple hours 🙂 I am sitting at Peet’s so I don’t have to listen to the upstairs banging at home. Usually during Savings September I won’t buy coffees out, but this warrants it for my own sanity. We will go ahead and classify it as a necessity.  DJ and I don’t have too much planned for the weekend besides school stuff (and him applying for grad school), so we are gonna take it nice and easy. I am going way back to recap our Labor Day weekend- I have been sooo excited to finally have a chance to share this fun weekend with y’all.

On Thursday, August 30th, my mom and stepdad, Pete, arrived around noon from Texas! They came for a wedding in Santa Cruz (and we happen to live so close so it all worked out perfectly to spend the weekend together!).We headed to none other than Bill’s Cafe per their request.

& My mom and I split their Smoked Salmon Benny- probably my favorite item on the menu (Or the French Garden omelette- depends on the mood, ya know?).

We also split their Belgium waffle. I don’t usually go for waffles for some reason, but this was just fantastic. I would 100% order this again!

My mom also surprised me with a bunch of Butterscotch See’s Candies lollipops! Eeek, she knows me well. I am like a child, and I LOVE these lollipops. I just love all candy. Sometimes when I go out for walks I take one with me, load up a podcast and am just happy as a clam. Seriously, I am five.

**re-re-re winding it back**.. in the afternoon after settling in, chatting at home, and a tour of Main Street Cupertino we decided to go get some happy hour drinks at Eureka.

We each tried a glass of white wine. We aren’t picky at all, but my mom and I tried two different types of sauvignon blanc, which actually tasted more like chardonnays, so we weren’t the biggest fans. Pete’s Pinot Gris was actually the best of the three! Eureka is more of a beer & cocktail type place, so I think next time I’ll stick with that. **Re-reading the paragraph…. I guess we sound kinda picky haha**.

That evening they went to the rehearsal dinner located in Santa Clara for the wedding. Deej had a late game, so I just did school work until they came back home. For dinner I had some leftover butterfly trout, sweet potato, quinoa, mixed greens, and hummus!

The next day, Friday August 31st, my mom and I woke up early to do hot yoga at 7:15 am together. This was her first time doing hot yoga and she annihilated it! She did so well- I was thoroughly impressed!! After getting ready for the day and us all nomming down my special avocado toast & eggs, they headed to Henry Cowell State park to see the redwoods and spend time on the Boardwalk and Pier in Santa Cruz before the wedding.

I went for a nice long walk (with my lollipop), chatted with my grandma and Aunt, then hit the books for the day. DJ had another late day, so in the evening I decided to make myself a flatbread pizza with my “Skip the sandwich wrap” and blog up my Friday Favorites post! But whoooopsies- I took a big ole’ bite of the pizza before thinking of getting a picture— what are ya, new?!

I snuck in a run in the morning of Saturday, September 1st (where is this year going?!). My mom and Pete returned around noon, and I was ready to have some fun since I finished my school work for the week!

First up- 85C Bakery! This is a chain Chinese Bakery that is super popular around here. I’ve never tried anything from it even though I pass it all the time. Part of the reason I haven’t is their baked goods are massive, so I’d want to share them (DJ isn’t a huge baked goods guy besides donuts and cookies), and there are so many options it’s overwhelming for an indecisive like me.  BUT, luckily, there is no one better to try out bakeries with than Pete- he is always down for a baked goods tasting challenge! I was psyched that he wanted to try this place out.

First, you get a giant tray with a pair of tongs and just go crazy. People LOAD their trays up. I don’t know where they all put it?! Like I’ll see tiny middle and high school girls meet up there all the time and probably get like 10 items each. It’s pretty cheap, but I am genuinely curious how much of it they eat!

We tried out several items- their sugared cream cheese brioche, a caramel pastry, and an almond danish (I think).. They were all so good, but I think the sugared cream cheese brioche was the tastiest. These all would be sooo great with coffee too. I’ll need to go back soon to grab something in the morning.

After, we went to Steins to try out some of their tap beers. I just love Steins, and usually they have great sours on tap, my favorite type of beer.

We tried a variety of beers, and overall they were just ok. But the company was great, and that’s all  that matters!

Time to go to DJ’s work! This was the main thing my mom and Pete wanted to do while they were here. And boy oh boy was it fun.

Around the seventh inning we became pretty hungry, so we used our vouchers to get some Turkey Mike’s and of course, the famous garlic fries!!! (The garlic fries are 87.8% of the reason why I go to the games).

We got a lot of food…. Pete had their pulled pork sammy, and my mom and I enjoyed every nibble of their veggie sub! I swear- is there anything better than stadium food?!?! I could live on those sides- they have some yummy baked beans, and I have zero self control with that coleslaw.

The whole game the Giants were down, but they came back in the bottom of the ninth with a grand slam. I mean, probably the best game of the season, and we were there to witness it! It was SUCH a fun time. In the next post I will recap our time in SF and Napa!
